Festive Feasting @ PARKROYAL on Beach Road

Every now and then, we do think about buffets. It's especially more fun if you have a few friends to eat with you. Just the other day, the wife and I and a few other blogger friends were stuffing ourselves silly at Plaza Brasserie at PARKROYAL on Beach Road.

(If you think Christmas is over and you can't have enough of the Christmas Turkey, Ham, etc. Plaza Brasserie still has it till New Year's Day!)

The wife's favourite! She loves buffets with oysters! The first thing that she 'attacks'!
I usually go for some warm food first meats!

Showing every dish of a buffet can be quite daunting task. I shall just highlight some of their festive offerings. These photos are not from stock photos provided by the hotel, but food that's served to guest to be eaten.

So it's as real as it gets, taken right from the buffet line.

The traditional Roast Turkey with Sausage Meat, Chestnut and Mushroom stuffing.
It's available at the 'live' cooking station.

There's also the Roasted Honey Glazed Ham with Pineapple and Cranberry Sauce.
This year's new introduction to the festive menu: Pork Knuckles.

The pork knuckles are served in Asian inspired Spicy Sauce and Red Wine Sauce.
Other things available at the live station includes Roasted Duck served with Chilli and Plum Sauce.

I had a few servings of sashimi, noodles from the noodle section. I was looking for their chicken rice, but they were serving Fried Rice with Seafood that night.

Here's a list of things they serve for mains. They don't serve everything but most of it every night from this list. Here it goes....  Deep Fried Crispy Eggplant with chicken Floss, Stir Fried Butter Prawns, Braised Vegetable with Conpoy, Crab Meat and Topshells, Oven Roasted Duck Breast Meat with Marinated Cherries, Crispy Soft Shell Crab, Grilled Fish Fillet with Mustard Sauce, Baked Alaskan Cod with Mustard Sauce, Braised Oxtail in Red Wine Sauce, Braised Chicken in Herbs Reduction, Stir Fried Pork with “XO” Sauce, Deep Fried Crispy Almond Prawns, Stir Fried Beef with Thai Mango Sauce, Sautéed Brussles Sprout with Fish Maw and Bacon, Fried Rice with Seafood and Preserved Olive and Braised Noodles with Crab Meat and Mushrooms.

I also love Christmas Fruit Cakes. It's nice, but I have to say it can't compare to my mum's version. Mum knows our tastebuds and add in what we like. ;-)

Here's the Christmas Pudding with Brandy Sauce.
This version for those who prefer the 'wetter' version and with alcohol.

Other selections on different night includes Christmas Stollen, Bread and Butter Pudding, Classic Chocolate Mousse, Raspberry and Vanilla Cheesecake.

There's lots of Christmas cookies, espresso brownies, pecan pies, mince pies, gingerbread as well.

Something I would like to highlight for ice cream fans. If you remember once upon a time, Cold Storage used to sell Kapiti ice cream. I loved them and one fine day, they were no longer for retail sale. Well, the buffet here serves Kapiti ice cream. Eat all you want!

(Hint, the ones in black tubs are Kapiti ones. Usually out of the 3 tubs, 1 or 2 are Kapiti ones)

Lunch @ Jaan, Swissotel The Stamford

It's rare on a weekday that I have lunch with my sis. We had taken leave because we had an appointment with Chef Julien Royer later in the afternoon to discuss what to prepare for the Bosch Dream Kitchen Contest we were participating in. Chef Julien was our mentor chef.

You can do an online search and read about Chef Julien. I shall not repeat them here. I am not being bias if I say that he and his team is really good!

We decided that before we met the Chef in person, we would like to taste his food without him knowing. We thought of booking but decided not too just in case his team found out. We just walked in to try our luck if there's a table for us at 12:30PM. 

Later at the appointment, he told us we should have let him know so he can serve us some extra dishes other than what we have ordered. We thought it would be good that we come ourselves, pay for the food ourselves so that when I decided to post this up, it's more authentic.

I think the set lunch at Jaan might be the best value around.
It's $58++ for a 3 course meal with coffee.

What you get is more than a 3 course meal.
You get pre-meal snacks + 3 course meal + petit fours + coffee/tea + a superb view!

Service was outstanding too. As usual, when we dine, we pretend to be total noobs, asking a few questions now and then and see how the service staff answer them. Throughout the meal, we were served by 4 persons and 3 of them were outstanding.

There was one day that we had another appointment with the Chef and sis was there early and got to the dining area and she saw there were all ironing the table cloth. Wow... is that why the table cloth was so nice without crease etc. Now you know, if you dine there, feel how nice and impeccable everything is there!

As soon as we place your order, we  were served pre-meal snacks.
The balls were potato croquet. Nice and warm, it's also starts to awaken your appetite. The thin brown piece in the middle is actually crackling chicken skin! Have a bite of it and you wish all chicken skin were made like this! What's on the wooden stick were smoked eel squares.

Sis and I were discussing our food, after all we were suppose to plan our menus with the Chef. We realised how clever of them to have different textures. Served to a panel of say 3 different judges, whether they like things crispy or soft, savoury, umami, it's all there!

We also had thin crispy rye 'bread' served with 'My Hummus'.

I am not usually a fan of lentils, but this was delicious. Sis and I enjoyed it. The lentils were whole yet it was really soft and sweet. Not the usual lentils we have with our favourite local Indian food for sure.

The card writes: "My personal interpretation using lentils from Saint-Flour, Auvergne and Chestnut Paste".

Yes, we noticed textures again. Thin crispy bread with soft lentils and chestnut paste.

The amuse bouche was Cepes Sabayon and Mushroom Tea.

It's served with a double glazed cup that had dried porcini mushrooms from Chaspuzac (near where the lentils come from too). The server will then come with a pot of 'tea', tea in the form of mushroom soup that had fresh porcini mushrooms. You should try this! So rich, so creamy, so fragrant with bites of soft and crispy mushroom bits.

Yes, we noticed different textures again! Crispy mushrooms and soft ones and the presentation was a mini show! No wonder we have been enjoying our meal.

The bread on the right, you got to try it. The Truffle rolls. It's so fragrant and the soft, it's worth asking for seconds or even thirds!

This might be funny, sis was saying, please don't instagram your food for this meal. The other 3 teams will know what we are eating! Shoosh will you? she said.  Can I just instagram this truffle roll without mentioning where it is? I pleaded. Seems that so many instagrammers know exactly where we were within a few minutes of posting! Oops...

55' Rosemary Smoked Organic Egg

For my starter, sis had the 55 minutes rosemary smoked organic egg that has been cooked at I think was 63 degrees Celcius.

Oh, the mini theatre show when the egg was presented. Rosemary burnt and the fragrant smoke fills the air. The egg was then poured into a double walled serving glass. Doesn't the above already look so beautiful?

The egg cooked at the temperature turns the egg white from transparent like feel into something translucent and soft. The egg yolk at that temperate does not hardens but turns slightly custard like. It was poured into the bowl that had smoked rattes, autumn mushrooms, chorizo iberico and buckwheat.

Why is this dish so worth it? The egg would have taken you about an hour to cook. The smoked rattes potato mash would have taken more time. The potato was not boiled in plain water, it's in some stock. Shhhh. I wonder if that's suppose to be a secret, but I learnt that from Chef Julien. The potato is then smoked with rosemary. How tedious it is to prepare the potatoes! The saltiness from the chorizo and crispiness from the deep fried buckwheat and aroma from the mushrooms. The combination was just absolutely lovely.

I had the Bresse Chicken, Confit Oxtail, and Foie Gras 'Presse'.
Yes, it's the Bresse Chicken from France. Do an online search and you can find how much the chicken costs in Singapore, it's the same chicken that "Team D" used in the Bosch Dream Kitchen finale!

Try the flavours of the chicken, oxtail and foie gras combined. It was served with maple and beetroot reduction. Some sweetness and crunchy bits with bits of the 3 meats combined was a nice little flavour explosion in your mouth.

Oh yes, it comes served with a small piece of toasted poilane.
Must be very precious!

The same bread that sis laughed at me when we lugged it from Paris last time. 
"Loti only leh" she said. LOL!

For mains, sis had the 36 Hours Kurobuta Pork. (For this there's a supplement of $15 in the menu)

Oh my, the most tender pork you can have. There's a layer of fat on it, but it's marbling that makes kurobuta so delicious. It was drizzled with 'autumn broth'. I wonder how many hours it took for the reduction, but it was so heart warming and makes you wonder what autumn vegetables and produce were used to make this broth.

The menu says served with 'forgotten vegetables'.

When the server served the food and described the dish, you are bound to ask what's forgotten vegetables'. It's vegetables that has always been around for the longest time, always flavourful and gives nice textures to food but has been forgotten by many who served more exotic vegetables.

For my mains, I had the Wild Caught Atlantic Mackerel.

You can see that the menu had all ingredients that are 'artisanal'.

Sis and I were analyzing the chef and his team plating techniques. The few dishes above, we realised everything has a 3 dimension look to it. At any angle, the food is pleasing to the eyes, even before we eat it!

Truth be told, I can't taste the difference between a wild caught mackerel and farmed mackerel. Maybe I should ask around or taste more of it to learn more.

I just know it was very nice! It was served with pickled shallot, deep fried crispy baby squid, sweet corn puree and jus 'dolce forte'.  Yup, dolce forte - chocolate sauce!

For desserts, I had the Caramelized William Pear.

I chose this because I wanted to see how the pear will be like. It came served in such a beautiful plate, I wanted to ask where they got it from! (Of course I didn't). The pear was nicely caramelized with a nougatine placed over it and topped with the top part of the pear and a scoop of ice cream. 

The plate was drizzled with salted caramel and dark rum jelly.
A very nice sweet end to our meal.

Sis had the 'Latte Poivre'.
Very unique indeed. Coffee chantilly with milk foam and java pepper ice cream.

It's sweet, has the nice coffee flavour and a peppery taste to it as well.

Complimentary Petit Fours.

Chocolate coated almond nibs and fruit jellies. Reminds me of the fruit jellies we used to eat as kids and haven't had it for the longest time! Of course these were nicer version of it.

It only if was not so cloudy, the view would have been better!

We really enjoyed our meal and sis and I really took our time analyzing dishes that we haven't done before. Even the arrangement of veggies we took note. We have been flipping lots of food magazines too. Getting a bit too competitive it seems!

We paid $164.02 for our meal, we ordered a few drinks that cost a bit. We realised DBS did have a discount if you used their credit cards though. December and January are months that many get bonus. It's a nice treat to yourself and family/husband/wife/boyfriend/girlfriend.

I used to borrow the magazines like MacUser and MacWorld from the National Library. I could guess when the magazines will arrive and will be the first to borrow them when they were 'brand-new'. At times, I don't get it because it was such hot items.

Mondays in Lyon @ db Bistro Moderne, Marina Bay Sands

The weekend has just ended, and we are all back at work. Some of us feel very energetic, I do! (because I do really love my day job and my colleagues) Some might feel so tired and lethargic after having a relaxing (or maybe hectic) weekend.

Food, some really nice good food at the end of Monday will bring you back to good spirits. db Bistro Moderne had Mondays in Provence few months ago. For the months of November and December, they are having "Mondays in Lyon".  Lyon is Daniel Boulud's hometown.

I always enjoy their in-house baked breads here.

"Mondays in Lyon" is a 3 course dinner set at $68/pax.
Available only on Mondays and ends on December.

If you add $32/pax, you will have a glass of red and a glass of white to pair with your meals.

Plateau de Charcuterie

You know that there's different quality of cured meats, and the version here that I have tasted always taste very good. What was on the platter? Grainy mustard in the little cup, guinea fowl, parma ham, saucisson, duck proscuitto, duck terraine, foe gras with quiince, pickled turny and lomo.

If you really like this stuff, go with your date / partner / friends who love it and choose the same starter, they will put it all in a big platter. If you like to have choices, maybe choose the following...

Soupe A L'Onion

Classic French Onion Soup with gruyere cheese. This beef based soup was so flavourful and it really warms you up. I am an 'onion' person, so I love this soup. They also top it up with a generous amount of gruyere.

If you try to make caramelized onions at home, you know how long you have to take to caramelized the onions properly to a decent colour.

Salade Lyonnaise

Of course they will have the Lyon Salad since the menu is based on food from Lyon!

This will be the wife's favourite. The thing she loves are all in it! (She's a salad person).
It's frisee salad, chicken livers that's done just nice, thick pieces of fried bacon, poached egg that you can break the yolk to let it flow..., croutons, mustard and carrot dressing.

If you opt for the wine addition, you will be delighted with the Les Laurelles 2010.

If you are a fish person, you will love the poached cod and fish mousse quenelles they serve here.

The cod was so tender yet still firm, it had been poached so nicely. Fish mousse quenelles (the two light brown thing beside the cod above) might remind you of our fish cakes, but it's softer and tastier than fish cakes. It's something well known in Lyon.

It's served with Nantua sauce, a classic seafood sauce made from shellfish and cream.The sauce has been so well prepared, you would not want to waste any of it!

Poulet Au Vinaigre

Oh, the sauce from this dish was so so good, that I can't get enough of it. When everyone was done, I discreetly scoop more sauce that was still on the serving platter and put 1 or 2 more mouthful into my mouth! I wonder how long they must have been cooking to get this reduction. (A French chef from the restaurant at the 70th floor who recently taught me cooking said that it's not possible to create a decent sauce if you have less than 1 hour).

It's hard for me to describe the sauce, it was creamy, a nice fragrance that's smoky but not burnt, a nice umami flavour that you get from the cherry tomatoes and overall a nice acidity that makes you want to pour it over rice. It's a good thing that they served it with rice.

Did you realise I describe the taste of the sauce first? It was so nice, I remembered it most. The chicken was nicely done. The use of cherry tomatoes gave it a nice twist too.

The chicken dish was served with Tarragon Rice Pilaf.

Nice, fluffy basmati rice that had been nicely flavoured. It's so good on its own you don't need the chicken to go with it. It was made better with the chicken and the sauce.

Talking about the chicken, I asked the service staff what chicken they used. She came back and said that chef said that it's French born chicken that has been raised in Malaysia. They live a happy carefree / free range live and finally get slaughtered and served in Singapore.

(My aunt told me they sell these French born, Malaysia farmed chicken in a few supermarkets now as well, I have not seen it, it's probably sold out when I visit supermarkets at night!)

Chicken lovers should try this dish!

Gratin de Cardons "Dauphinois".

If you are vegetarian, there's always a vegetarian dish on the menu.
It's cardoon and potato gratin, mushroom Fricassee, fresh herbs. What's a cardoon, we had to google while eating and found out it's related to artichokes. It looks simple and boring, but it does pack a punch!

With the wine add-on, you also have a glass of Les Cranilles 2010.

Ile Floattante

Meaning Floating Island,  it's poached meringue. Poaching it makes it so soft and still firm. It's served with Vanilla Creme Anglaise and topped with pink pralines.

Coupe Chocolat Et Marron

Chocolate lovers will like this. It was 3 scoops of ice cream. 2 scoops of chocolate ice cream and 1 scoop of dark chocolate. Since Valrhona originated from near Lyon, they used Valrhona chocolates!

An interesting add on to the ice cream is the candied chestnut. I wonder if it's the Marron Glace, which I think it is, did not ask them while we were eating. I assume it is since it's from Lyon as well.

It's nice to see Chef Stephane Istel again. He's such a jovial fella. I guess a happy team with him makes happy food that all will enjoy.

It's Monday today and if you are game for a little adventure to Lyon via your tastebuds tonight, pick up your phone and make your reservation now. It's a very nice 3-course meal that is less than a hundred dollars and it's something I am sure you will enjoy. I sure enjoyed the meal.

Mondays in Lyon is offered at $68 per person. For an additional $32, pair the menu with regional wines. If you want to try this special menu, go tonight. The next two Mondays left for the month, they will be having Christmas and New Year's eve menus.

Favour to ask you.... The People's Choice Award for the Bosch Dream Kitchen

This is a last minute favour to ask from all your readers. Voting ends 7 December.

I am so thankful and grateful to those who have taken time to vote for us to be the Top 4 groups to join the Bosch Dream Kitchen Cookoff contest.

We got in and have been busy cooking in an absolute high stress environment.

Episode 1: We had to prepare a liquid salad dish, yup salad that you can drink! Molecular gastronomy, none of us had experience in using Xanthan gum! Simply 'han tam' lah..

Episode 2: We had to guess the ingredients in a fried rice that was served to us and replicate it! There were 24 ingredients apparently and none of the teams could guessed it.

Episode 3: They scared us with a live frog hidden inside a covered bowl. Sis screamed her head off when we lifted the black cloth covering the bowl. We were taught how to prepare Frog Gruel. Gruel? Ain't gruel what they feed Oliver Twist in the Charles Dickens story?
