Ugly Cake Shop, a licensed online cake shop & Cupcakes Giveaway

Not too long ago, I was at a pop-up event where beautiful ugly cakes / cupcakes and beautiful accessories were sold. Wait, that sounds like an oxymoron isn't it? Beautiful Ugly Cakes?

Yes, they were very beautiful Ugly Cakes. You can read more about Ugly Cakes at www.uglycakeshop.sg or their Facebook page.

They call themselves ugly because they don't use artificial colouring, artificial flavours, fondant, gum paste or marzipan in their bake goods. Those are ingredients that usually make cakes look very pretty. If you are ok to use safe artificial colouring because you want certain colours, tell them. They will do it for you. I saw some Tiffany Blue cupcakes that were gorgeous!

So where was the pop up held? At a very hipster looking place. A nice little cafe and bar that carries the cakes and cupcakes made by the Ugly Cake Shop. If you are in the area, drop by this place. Even if it's not for cakes, but for a coffee or some beer. They do have a nice collection of beer here!

Let me tell you a secret, the baker behind this ugly cake shop is not ugly at all. She was leading a team at Singapore's State of Fun (I am sure you now where that is) before she decided to fulfill her dream of having a cake shop.

Her bakes are named quite interesting after her ex-colleagues and friends! Take a look at her collection here, maybe you might know her ex-colleagues!

The pop up was held at the back of the cafe. Never knew it was big enough to have this and it's air-conditioned too!

The cakes, cupcakes and jewellery do match don't they? So there's an alternative that you know now, if you are looking for healthier food for yourself and family.

They use high quality ingredients. Good butter, French cocoa etc.
I know people want to order birthday cakes that are beautiful, tasty and also healthy.

If you buy their bake goods, you are also indirectly contributing to a under nourished kids at Timor-Leste. I also love the fact that Ugly Cake Shop gives part of their profits to a school in Timor-Leste. The school has a nutrition fund and the kids that are under nourished are fed through this fund.

The more I like at her cakes, it reminds me of photos in a Donna Hay magazine. Don't you think so?
I am so so tempted to use my finger to swipe some cream off!

Their cupcakes are delicious, moist and taste very real. You know when you bite into it, that there's no artificial additives that you sometimes get from other places. Just ask kids to blind test and they can tell!

Vote for us at the Bosch Dream Kitchen Cookoff.

Hi readers,

My sis and I have a small favour to ask from you all. Out of curiosity and tempted by the prize, we participated in the Bosch Dream Kitchen Cookoff. We got happier when we got called up for an audition! Oh the cameras and lighting and all sorts of equipments that they have! They filmed us, asked us questions and we thought we might not make it for we were overwhelmed during the audition!

Guide to Eating Healthy.

You probably know about Eating Healthy. We would have read about it on TV, in the newspaper, magazines etc. We would have been nagged about it by our parents, aunties and uncles. Our teachers in school would probably have told us about it. In Singapore, the Health Promotion Board has been educating the public about eating healthy.

HPB has introduced the Healthier Choice (red circle logo with a food pyramid icon in the centre) logo and asked restaurants and even hawkers to provide healthier options in their menus. You would probably have seen it.

While surfing HPB’s website, I realised they have a site about Healthy Dining too. http://www.hpb.gov.sg/healthierdining

It’s easy to talk about having less sugar, less salt, less oil, more fiber, more vegetables, more fruits. The place that I work has a Wellness Division. They organise the ACTIVE day yearly and have activities that help keep us sane and healthy. They’ve gotten the Health Promotion Board to set up a booth too. What the HPB people did in exchange for a little gift was to make us install an iPhone App.

I find it quite interesting and I thought readers of this blog might like it and install it too. Oh yes, it’s free too! Search for iDAT by Health Promotion Board on the Apple AppStore.

You can try out the other functions, but I would like to highlight the “Add Meal” part of the App. One way to help us eat healthy is to calculate the calories intake. We should not waste our time eating food that’s not worth the calories.

We know to stay healthy we need to consume enough (not too much nor too little) calories and healthy ones as well so that our bodies can make use of it. Keeping tabs on the food we eat will help. Most of us carry our phones with us, so this App is very convenient!

Many of us would be clueless about how much calories a dish would have. Most Apps would not have the calories of local food.

Looking at the list of food does makes me hungry! They must have invested a lot of time in making this app!

Other favourite dishes that caught my attention are Bak Kut Teh or Beef Rendang. It doesn’t mean that I won’t eat it. I will just eat less of it, or share some of it with friends or colleagues.

I hope this different view of how to eat healthy was a good read and also some food for thought for you. The food that you see on this blog is mostly dishes that we share with our family or friends.

Recipe Example

Ingredients:
- Yam (diced, 300 grams)
- Mushroom (about 8 rehydrated shitake mushrooms, sliced)
- Pork belly (250 gm, cut into strips, without skin, marinated with pepper, soy sauce and cornflour)
- Dried Shrimps (Hae Bee) (a hand grip)
- Chinese Sausages (Lup Cheong) (1 sausage, sliced thinly)
- Garlic (3 cloves, chopped)
- Shallots (5 bulbs, chopped)
- 3 cups of rice (rinsed, drained)

Seasoning:
- 2 Tbsp oyster sauce
- 1 Tbsp dark soya sauce
- Salt, pepper
- 1 tsp sesame oil
- 1/2 tsp sugar

Method:
- Rinse and set aside the 3 cups of rice.
- Heat oil, fry the garlic, shallots until fragrant.
- Add pork, sausages, mushrooms and dried shrimps. Fry for 2 minutes.
- Add in yam, rice and all the seasoning. Stir until it becomes fragrant, around 3 minutes.
- Pour the mixture into the rice cooker and add water till it just covers the rice.
- Turn on the rice cooker as how you would cook normal white rice.

Let's Cook Healthy Together Photo Contest. (Part 3)

Have you been thinking about what to cook for the Health Promotion Board’s Let’s Cook Healthy Together Photo Contest? 

If you are running out of ideas of what to cook, you might be glad to know that HPB has an iOS App on the Apple App Store that has been customised for Singaporeans.

Do a search for “Healthy Chef” and you will find the app as shown on the top left corner of the screen captured above. (At the same time, download iDAT from HPB too!)

If you are wondering if these recipes are any good, HPB has gotten some famous Singapore Chefs (Eg Chef Yen Koh, Chef Garibaldi, Chef Eric Teo, Chef Kintamani, Chef Yong Bing Ngen to name a few) to prepare them! They even listed down the calories, fats, carbs, cholesterol etc per serving!

We know that cooking need not be precise (unlike baking), but most of us are not trained to be able to tell how much calories are in the food we eat. Try following a few recipes. You would be able to gauge how much calories there are in certain type of food. After a while, you might roughly be able to calculate calories by looking at ingredients!

I noticed something about this app. A search for recipes by Calories! If you think you have been having too much rich (as in high in calories) food recently, and want to eat something delicious yet low in calories, search for food under “Calories”.

Example of ‘under 200 kcal’ food includes Abalone Egg Custard, Asian Gazpacho etc. 1 serving of the Abalone Egg Custard is only 65kcal! Delicious food doesn’t mean it is high in calories.

Making your children remember you forever!

I once talked to a friend who has 2 children and she works full time in a bank. Bankers work late and that’s one reason she doesn’t cook much. Another reason is that her mum prepares such nice food and is the fussy type and everyone depends on her mum to prepare all the food. Her children will grow saying grandma’s food is the best.

I told her once that maybe she should master 2 or 3 dishes and feed them to her children. Make them grow up remembering the taste of your cooking. Reinforce in them that it’s very nice. (Of course make sure it is nice!) Cook it often enough that they will remember it, but not too often until they get ‘jelak’ (bored) of it.

Brain wash into their heads, that when they behave, mummy will cook you the special dish as a reward. Occasionally ask them, do you want to eat that dish? They will probably say those 3 dishes that she has mastered. Do you think it will work?

Ask yourself now, are the dishes cooked by your mum (or maybe Dad, Grandma or Grandpa) the best tasting ones? It’s because you have grown up eating it. We tend to think about it and the familiar taste will make it the best dishes you have tasted in your life. The saltiness of food is what you are used to. You won’t complain that it’s too salty or too bland. The sweetness, aroma, ingredients used are all customised to your liking!

If you have children, maybe you should try the suggestion above? One day when your children leave home, they will remember the food you cook at home when they were younger. When someone asks them what the best dishes they have tasted are, it will most probably the ones that you cooked for them since young!


Take photos of your family activity!

Another way to remember the food and the family fun is to take photos of it. Most of us have smartphones, compact cameras and also DSLRs. Just go ahead and take photos of your family at any time!

This is something I thought might help. This is not professional photography write up, but a poor man’s way of taking photographs with limited equipment. Here are 3 tips for taking nice family activity photos. Use your smartphone, it’s probably the camera that most people are carrying with them almost 24 hours a day!


1. Find a leaning point.

Do you realise that your photos are always blur / out of focus? It’s because you either move too much or your hands are shaky when you take photos. Instead of just pressing only shutter release button on the camera, the whole camera moves when you press it.

One way to prevent blur photos is to anchor yourself.

  • One way is to have your hands near your body, imagine a piece of paper between you and your hands. You need to hold it tight such that way your hands are anchored to your body when you take photos. 
  • Lean on a wall to take photos. Sit on a chair with the back in front to anchor your hands on the back rest. You can also anchor your hands on the dining table. Just make sure you don’t move too much when you are taking photos.
This is most important when there isn’t sufficient lighting in the room. Your camera’s shutter will be exposed longer and you need to anchor yourself to have in-focus photos.


2. Focus on their eyes, if ladies their dresses too!

Target your camera to your subject’s eye when you take photos. Wait for them to finally look into your direction, then press the release shutter button! Photos only look good when you see the subject’s eye fixated on you.

Don’t zoom in too near or too far away. Having the subject covering between 1/3 to 2/3 of the screen will usually be just about right. Remember photography is an art. Try it out and see what works best in a particular situation.

How do you make sure they look at you? You either wait for them to look at you, or distract them to look at you.

Oh, I realised something, when you are taking photos of ladies, remember to zoom out a bit and take a photo of their dress if you notice they took time to dress up. It takes them like 30mins to an hour sometimes to pick the perfect thing to wear!


3. Ask them to fake a pose.

Sometimes when you want nice photos for memories, ask them to pose deliberately for you. If they are cooking, ask them to hold the whisk, sneak a bite on the food that has been prepared. These would be interesting photos that will be conversational pieces months or years later!

Let’s Cook Healthy Together Photo Contest - Photography Tips

Few days ago you would have seen a post I put up on the HPB (Singapore Health Promotion Board) Let’s Cook Healthy Together Photo Contest.

Why is the HPB asking Singaporeans to eat healthy? It’s because in the National Health Survey 2010 and National Nutrition Survey 2010, it revealed that 40% of Singaporeans are overweight or obese. That is quite a high percentage! That number is for year 2010. Today, around 2 years later, what is the number like?

Singaporeans are also exceeding in their daily intake of salt. We all do need salt in our system, but if there’s too much salt, all of us know about water retention, high blood pressure and the risk of cardiovascular disease. I do not need to list what each of it does, you can do a search online and you can read all about it.

One thing though, cardiovascular disease means nothing to you until maybe you or your close family gets it. We know this because it happened in our family recently. The anxiousness waiting in the hospital, the battery of tests, CT Scans is horrifying!  Out of a sudden, you are forced to find out what angiogram, angioplasty, stents etc are! It was stressful indeed!

Suddenly eating healthy, having less salt, substituting salt with fresh herbs, having more fiber in your food, exercising makes sense.  Even when you dine at restaurants, ‘the healthier choice’ logo on menus seems to catch your attention. We know we are picky in our food, we want something that taste superb, the best recommended dish, but probably from the 3 or 4 dishes we order, we substitute 1 dish with the healthier choice version. Not as oily or salty as the original recipe, but depends on what you have already ordered, don’t overload the oils and fats in one meal.  I personally think it’s ok to eat what you want, but don’t overload it all in one meal, eat in moderation.

Let me write about something more interesting how to take eye-catching photos. The HPB contest is about taking photo of food and family right? I hope these tips would help you.

This blog has full of food photos, some are nicer but some don’t look as appetizing. For food that I eat outside with friends, I usually only take less than a minute to photograph it. People are hungry and also food should be eaten hot not cold. Even cold food like ice cream melts if you take too long to photograph it.

Taking food at home is different though. You can take your own time to photograph it. Since it’s at home, you can also style it the way you think is nice. People at home also get impatient when you take too long to photograph something. I usually do it very quickly. You can take your own time, take the best photo for the contest!

Here are some tips that you can follow to take nice photos. Follow those that work best for you. Photography is an art, art is not something fixed, it depends on your inspiration and creativity. Go forth and take photos!

Take a look at this photograph. This was a muffin made by my sis recently. It’s a reduced sugar muffin by the way.  Use ripe bananas for natural sweetness, so that you can reduce the sugar you put in.

Let me tell you how I took this photo?


Some rules that you can follow, I am not a professional photographer. I have lots more to learn. This is my simplified version that I follow.

Rule 1: Use natural light.
When you want to take nice photos, use real day light. Take photos when there’s sunlight. This was taken on a small table just beside the window. When light falls from one side, it gives some slight shadow  to the photo and it looks more 3D. Does the muffin looks as if you can take it out of the photo?

With natural light, photos will turn out extremely pretty!

Rule 2: Some slight bo-keh.
I took this photo using a DSLR camera, so there a bo-keh. Bo-keh is the effect of blurring. Some people like it, others don’t. I think a slight bo-keh is nice, but too much looks too fake.  You can see the top of the muffin is sharp, but the rest of the photo is a bit blur, so the emphasis is on the muffin.

You do not need a DSLR to have this effect, some point and shoot cameras can also have this effect. Experiment with your camera. If you are taking photos using your iPhone, you can also achieve this effect. Sometimes you just want to download an editing app to do it.

Rule 3: Rule of Thirds
This is what photographers usually obey. You can read more about it here Imagine your image divided into 9 equal segments by 2 vertical and 2 horizontal line. The most important part of your subject is placed where the lines intersect.

I don’t follow it exactly at times. I adjust it a bit to my own liking, but still follow the concept. You can see the muffin is not place right in the centre of the photo. The walnut on the muffin is around where the lines intersect. I adjust it a bit and I like how this turn out. Photography is an art, art sometimes don’t follow rules.

Rule 4: Some props
The muffin was taken on a small little table by the window. Wood grains look nice, but I wanted to make it look more luxurious. I look around and saw my sis’ blouse hanging for drying nearby. It had a nice dark blue and the texture of it coarse. I asked for her permission and she laughed at me.

I put it on the table, put 2 muffins on it and also 1 very shiny small fork beside it. Place the props where you like it, and this is the result.

Rule 5: Crop away junk
For 90% of my photos, I do not bother to crop the images. It’s too time consuming. I blog for fun and not for work and it’s not a food magazine where all the photos must be perfect.

Sometimes, there is people’s hands, or the position of the food just look wrong. Just crop it away. (Cropping is to cut away part of the photo so that things you do not want can’t be seen in the photo)

Yam Rice

Another example of recent photos I took. You can scroll back a few posts to get the recipe. The ingredients are simple and it’s tasty too.

I took this photo at the same location I took the muffin photo. Just that this time I did not use anyone’s clothing. It was on the natural teak wood table I had. I wanted to give it a subtle Japanese look to it. (though I know it’s a very Chinese dish that mum made since I was young) I chose this Japanese bowl that I have in the kitchen. Fill it up with the Yam Rice. I put a pair of Japanese sharp-ended chopsticks beside it. I did not take a long time to style it.  Since I am not submitting the photo for a contest so I just took 3 photos of it and chose the best to keep for remembrance. (and also to post it on the blog)

If you look at Food Magazines, you would notice lots of top down or aeriel view photos. I also took a few photos of the same Yam Rice top down.

I only took 2 shots of this photo, so it’s not that perfect. It’s also not as sharp too. It was a quick photo taken. I could always prepare this dish again to take a photo of it. That’s the thing with home cooking. You can always cook it again!

This photo had no editing done. I only changed the size of it so that it would load faster on a webpage.

Some people like their photos to have lots of ‘white’ space. For the white space, I could have put a piece of yam at one corner. That would give it a different look.

For your photo, if you are using fruits or vegetables are part of your ingredients, you can use them as props too. Maybe a bunch of tomatoes on the vine might look good beside your dish.

When I took this photo, what I had in mind was a square photo.

By applying Rule 5 above, I cropped away the space that I don’t need. This is how it looks after the cropping. I like what I see.

Health Promotion Board: Let's Cook Healthy Together Photo Contest

Do you cook at home? Some families cook daily, others cook once or twice a week.

For our family, I live with my wife and my sister. The 3 of us at home take turns to cook. Since all 3 of us are working, we only managed to cook at home twice or thrice a week. The dishes we usually cook are those that mum used to prepare when we were young. We always try to recreate them and then send the photos to mum via our smartphone ‘group chat’ function. We have siblings staying overseas and they are part of the group chat.

Mum laughs when we send her the photos. In fact, she lets us know the ‘secret’ of cooking certain dishes when we tell her they just don’t taste the same! The next thing we know, our siblings in the UK are also trying to replicate the same dishes! The 3 of us here will try a few times before we send the photos over to ‘show off’. We have a good time discussing, laughing and sometimes arguing over the taste. It’s good family bonding fun!

We cook at home because we know it has many benefits. We know the quality of the food that we buy. Most of us will pick the freshest vegetables and best cut of meat for our family. We can also control what’s added into the dishes- less salt, less oil or fats, no MSG, no fake flavouring. We know that we do need fats in our body to absorb vitamins A, D, E and K (Yes, I memorise this since I was young), but we can choose the good kind of oil if we cook at home. You want to control what’s getting into your body don’t you?

You probably would have watched on TV the FairPrice Family Cook Off 2 show recently. I know some of you while watching the show might have said to your family: “We can do that too! In fact, I think we can do it better!” The only thing preventing you all from joining the show is that you are camera shy!
