Christmas Communal Feast @ Halia, Raffles Hotel Singapore

It's almost Christmas and celebrations has started for many. 3 food loving colleagues and I escaped our hectic work day by having a mid week Christmas Feast. We went to Halia at Raffles Hotel to try the Communal Feast.

Have you realised that most of us love sharing our food? We will order and then portion up what we have and distribute to each other? This Communal Feast is designed for those of us who love to share food. It's quite a feast too! If you scroll all the way down, I have included the full menu for you to salivate.

halia

All of us have stories to tell and as we dine with different people, we get to know each other more. On our drive in colleague's car to Raffles Hotel he was telling us that he had his first legal drink at Raffles Hotel, treated by his brother. Another female colleague said she would not have remembered because she had too many 'illegal' ones before she turned 18. Shall not say more to protect our privacy.

Anyway, they were also talking about Seah Street Deli and how they miss the place. Guess what? I told them Halia is where Seah Street Deli used to be! Just with better food! haha....

The Candy Cane (Sprite and Mint Tea based) and The Grinch (Midori and Lime Juice).

There are 2 cocktails and 2 mocktails in the special menu. Somehow as people love to take photographs to instragram, fb or tweet it, everyone ordered a different drink! Does that happen to your friends too?

White Christmas (Baileys, Kahlua, Apricot Brandy, Milk and Syrup).

Santa's Hot Chocolate.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Dinner started with a selection of breads that was quite addictive. Each of us had our own favourite and we reminded ourselves not to ask for more. pace, pace..... don't stuff ourself with bread.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Chef's Soup
Chef's soup was tomato soup with herb oil. It was a very tangy soup, that's quite appetizing.
Some felt it was too sharp, but most thought it was good.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Brussels Sprouts
This pretty dish is made from Brussels Sprouts! Grilled Brussels Sprouts and Brussels Sprouts Slaw. It was very tasty, I love the whole grilled ones while another colleague liked the slaw. It's served with dried iberico that's also very addictive, so crunchy and tasty it makes you wish they had more of it. The spiced almonds were also tasty.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Prawn Cocktails
This was another very nice starter. They had horseradish on it and so be careful when you have it. You will be quite awake after eating it! A nice spicy touch on the tip of the tongue that goes well with the piquant mayo and crisp salad.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Goats Cheese Mousse.
This was also a pretty dish that everyone just had to photograph it. Two artistic blobs of goat cheese mousse. The goat cheese had been mixed with cream cheese and wild honey they sourced from Hanoi. It goes very well, even if you do not really take cheese, try it, it's good.

I loved the heirloom tomatoes they serve with the cheese. They had also sprinkled olive 'soil' around and with pieces of toasted brioche.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Potato Fries
If you have dined here, you know these are very tasty fries. Served with truffle aoili and piquant mayo. Really addictive, and I say it again, very addictive! A colleague was eating it non stop and saying it's so nice.

We love how they paced our food and serve the sides at the correct timing too. These fries goes well with the goat cheese mousse too!

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Yellowfin Tuna Loin
My 2nd most favourite of the night was this seared tuna loins. They only seared the sides and it's rare inside. So tasty with the smoked avocado puree and chopped red peppers and dried apricots. It's very well balanced in taste.

I wonder if they have this in their regular menu, I will just eat this as my mains the next time I am here.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Sides of meslun salad with tomato, cucumber and feta.
It's nice but with the yummier stuff, this was a filler and a palate cleanser. We can't wait for more food to be served!

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Sides of Skinny Beans and Portobello.
I am a skinny beans person and these were really nicely done. All of us were so amazed with the portobello! It was so so delicious. The tastiest of the 3 sides in the menu!

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
House Smoked Duck Breast
Another photogenic course. It was a very delicious smoked duck. We did really hope we had more of it. Served with a very smooth parsnip mash.

We were all talking about eating habits and someone said parsnip is called ugly pale carrot in their home. LOL! We must find out how they make it so tasty!

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Sous Vide Wagyu Rump
A colleague just before this has been asking the rest of us if we are already full, if yes, he will gladly devour this himself. I love sous vide meats especially beef. My number one dish of the night.

The beef was tender, moist and nicely seared outside with a sprinkle of coarse salt that I could taste. Awesome! The mash potato has been infused with truffle oil. It's so delicious it was wiped out clean.

I was not a 'bother' this time and did not asked the wait staff the temp and how long it was cooked. I also did not ask where the wagyu is from. My guess is that it's Mayura Station because their previous wagyu I had at Halia has been Mayura Station ones.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Turkey Breast
We were all saying, they should have served this before the wagyu. After tasting the duck and wagyu, we did not like this dish. It was drier as compared to the earlier dishes. It's not that it's not nice, but after the tastier meat, we were spoilt.

We did finish it up though, after we perform a tongue reset.;-P

All of us except for one colleague was already quite full after the duck. I think the service staff knows so the lady who served us asked if we would like to pause for a while before dessert is served? We said bring it on! We will eat it slowly.

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Christmas Pudding
We were quite glad after cutting it to 4, it's not too big a piece. A very nicely done Christmas pudding with a blob of brandy butter on top!

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
Selection of cheese (90 gm)
Two of my colleague are cheese lovers and this platter was for the 2 of them. I only nibbled a bit like a mouse and the other colleague hardly touched it after he has a bite into some gorgonzola and his face expression changed.

There was camembert, gorgonzola, blue and cheddar with homemade biscuits and chutney.

I did learn a bit about cheese from these colleagues, next time I shall try more. Some biscuits were too 'strong' and overpowered the cheese. Oh snobs!

Halia @ Raffles Hotel Singapore, Communal Feasting Menu
The full menu. $360++ per set, feeds 4 persons nicely.
This special crafted Communal Menu will be available for dinner till 25 December 2013.

A note of thanks to the folks at Halia and Foodnews PR that provided this unhosted dinner.

Sunnyhills Pineapple Cakes 凤梨酥 from Taiwan

It's nearly the Lunar New Year and mum has already started baking cookies. Mum has asked us to give some to the in-laws, which have already started to eat them.

Samples have also been sent to our home by some companies. Sunnyhills has again sent some to me and I have fed them to my colleagues.

SunnyHills Pineapple Cakes

I like their brown box packaging. Similar to last year's packaging. This year they have Festive sets that are available in Box of 10 ($25), Box of 15 ($37.50) or Box of 20 ($50).

SunnyHills Pineapple Cakes

This is how the Box of 20 looks like. When you buy it, it comes with a festive label, sift card as well as a handy Festive Bag.

SunnyHills has opened up at the Raffles Hotel Arcade and if you like to give these as gifts to your family or friends, you can head down to grab some.

SunnyHills Pineapple Cakes

The Feng Li Su comes individually packed and it looks good to present to your guests.

A colleague who is a frequent flyer says he has been eating them at the Airport Lounge! So, he was very happy when I gave some to my colleagues.

SunnyHills Pineapple Cakes

The golden ingot above is made from pineapple that has been organically grown on the BaGua mountain, eggs that has been responsible local farms in Taiwan, Japanese gourmet flour and premium New Zealand butter. They are baked without additives or preservatives.

The pineapple cakes are made in Taiwan and air-flown to Singapore fresh. You can see the date it is made printed on the boxes.

SunnyHills Pineapple Cakes

If you are a sweet tooth person, you will definitely like it.
If you don't take too sweet stuff, have it with a cup of Chinese Tea, it goes perfectly.

I find it sweet, but it's the nice kind of sweet. Maybe this year's harvest of pineapple are sweeter. Another colleague who had it says it's too sweet for her. The frequent flyer colleague likes it with a sweet smile on his face. It is quite fragrant as a colleague opened the wrapper, I could smell a buttery and sweet aroma in the office.

Raffles Creamery @ Raffles Hotel

If you were waiting for the photos of the ice cream from yesterday's post, here it is.

You can order the ice cream while seated inside Seah Street Deli or you can walk out to Raffles Creamery just outside the entrance of Seah Street Deli.

The guys just ordered inside the Deli. Isn't it easier to place your order with the waitress? ;-p
The ones ordered 'inside' were served in tall glass ice cream bowls.

Raffles Creamery

The above is 2 flavours of ice cream with mars bar topping I think.
The below is 1 flavour of ice cream mixed with 1 flavour of sorbet. This friend of us wants to mix it though it might taste weird.

Raffles Creamery

Oh the ladies did not want to order inside. All of them happily skipped out together to the 'ice cream kiosk' to pick their ice cream and toppings. Then they admired the guy who was 'teppanyaki'-ing the ice cream for them.

The ice cream ordered 'outside' were served in containers like this.

Raffles Creamery

My guess is that this is chocolate with M&Ms.

Raffles Creamery

I think these ladies love alcoholic based ice cream, so this must be one of those alcoholic flavours with Mars bar topping.

Raffles Creamery

I realised something. I think the ladies like Gummy Bears? Just look at the topping for the next two ice cream.

Raffles Creamery

Question: How do you all eat gummy bears? You bite the head off first, chew and swallow then pop in the head, chew and swallow.

Or you put the whole thing in your mouth and chew?

Raffles Creamery

I have in 2007 posted how they 'teppanyaki' the ice cream with a video as well. Click here to view it.

Seah Street Deli @ Raffles Hotel

This was the second part of the Sushi Tei lunch I posted a few days ago. After that nice meal, some people (OK, it's the ladies) wanted to continue chatting. The same people also wanted to have some drinks and ice cream.

We browsed their menu again, and did not find anything that fancy the picky taste buds of the ladies. :-P We thought we would ask the servers that was serving us, if they knew any place that sells ice cream. Guess the answer? "I think 7-Eleven nearby should have" was the reply! LOL!!!!

Yours truly then suggested Raffles Creamery. I told them you can sit at Seah Street Deli and order the ice cream from Raffles Creamery, so that you will still have an air conditioned place to chat. :-)

Half the people migrated over to Raffles Hotel.

Seah St Deli

We could have eaten these if we did not have a very full lunch just before our visit. ;-)

Seah St Deli

OK. Here's some of the drinks.
This is Pineapple something that some had. (haha.. I really forgot who had it)

Pineapple Something?

I ordered something that sounded really weird.
Pink Flamingo! hehe... Very refreshing on the super hot Saturday afternoon. It's very very sweet!

Pink Flamingo

For some people, on hot days, they will still drink hot coffee. I know many people are like this. (eg. my mum's one of them.)

Coffee

The (I think it was) 8 ladies that came along were yakking away, talking about shoes, handbags, iPhones (it was that launched weekend), holidays (one went to Spain) etc.

The 4 guys had to move the mouth too. Guess how did the guys do it? We ordered food so that we can move our mouths too! LOL

We ordered wedges. These are quite delicious wedges!

Potato Wedges

We also had their fiery fries. The spicier version of it. (They had two kinds)
We finished the two bowls of it. Even after our lunch!

Fiery Fries

We gave 'gorilla' a surprise! We secretly ordered this big slice of cake for him.

The kind folks at Seah Street Deli played a "Happy Birthday" song over the sound system. The cake was brought out with a candle and 'gorilla' was so embarrassed! (everyone in the restaurant turned over to look and clapped.)

Oh man. His face turned so so so red! For all of us that knew 'gorilla', we all know he is very thick skin and never blushes. This time, we caught him totally off guard. LOL

(Photo not posted here for his privacy. Those friends who wants to see it, log in to Facebook. It will be there soon)

The cake's nice. Very chocolatery, and the cherry cream makes it very unique. I think the rest of us ate more than half of it for him. Cakes are something the ladies liked. (compared to fries and wedges)

Chocolate Cherry Cake

Hey, what happened to the ice cream? I shall post it tomorrow ok?

Raffles Creamery @ Raffles Hotel

If you have been following the last few day's photos, right after dinner, we had ice cream. Raffles Creamery is just outside the door of Seah St Deli, in the courtyard.

Save me explaining, you can read it here:

The next few photos are smaller photos (for quicker loading) of the process of 'tepanyaki-ing' the ice cream.

Our friend ordered a triple scoop, so 3 scoops of ice cream here.

Mashing and chopping....

More violently as it goes...

Is it mixed well yet? Not quite... Add in the toppings....

Spread it all on the freezer pan to cool the mixture, and to mix is well.

Hmmm with the scrapper that the person is using, wonder if he had prior experience in the cement industry.

More chopping! And rounding it up into a lump.

The lump is then scoop into the cup.

The butterscotch wet topping on top to finish it up.

Here's a video of them making the one I had.
Some exotic vanilla, gummy bears and granola cereal as toppings. I think it's a good job for those who likes to vent their anger! haha..

Yes, all of us ate inside the Deli, it was just too warm outside.

Not the best ice cream you can get, but the fun / wah! factor is there.
