New menu and new team @ db Bistro Moderne, Marina Bay Sands.

If you have been to db Bistro Moderne recently and noticed a little change, a little difference in the menu, the promotions and events happening there, you are right. There's a new Executive Chef and new Executive Pastry Chef in charge of the kitchen now.

Things are getting exciting under the new Executive Chef Jonathan Kinsella and Executive Pastry Chef Benjamin Siwek.

Feeling a little curious about who Chef Jonathan is, I did a search on Chef Jon and he's quite amazing. He learns from his father at a young age, and his father is a certified Master Chef faculty member at the Midwest Culinary Institute. He has worked in a few places and he decided to come to Singapore this year. His previous stint was at sister restaurant Epicerie Boulud in NYC.

For Chef Benjamin, he's got an IT background. (just like me!) He decided to enrol in pastry school and have been rolling dough and making luscious and delicious bread and desserts. (Maybe I should too eh?)

This was an invited tasting by Marina Bay Sands and db Bistro Moderne, to taste the food by the kitchen team led by Executive Chef Jonathan Kinsella and Executive Pastry Chef Benjamin Siwek.

db Bistro Moderne has concocted 2 interesting drinks for the monsieur and mademoiselle when want to have a drink just before your food.

On the left is "Exit The Dragon" for the gentlemen. It's white rum infused with mandarin. Shaken with Chinese 5 spice syrup and fresh lemon juice.

The shorter glass is "Pink Floyd" for the ladies. A very interesting pomegranate-infused tequila shaken with fresh lemon juice and organic egg white!

Introducing Executive Chef Jonathan Kinsella. He's been cooking professionally since the age of 22!
Here's the tasting menu prepared for us that night.

Some of these items are available for the on-going Mondays at Daniel Boulud. The new "Mondays" menu starting from April 8 will feature the best from Chef Daniel's New York "originals". As part of their 20th anniversary of Chef Daniel's flagship Restaurant Daniel, dishes from the iconic Restaurant Daniel and also other New York restaurants will rotate on the menu here in Singapore every Monday.

Seafood and Vegetable Aioli.

A very light and quite satisfying start to your meal if you order this. A platter of poached seafood like cod, mussels and prawns with a variety of seasoned and raw vegetables. 

I know if I order this for the wife, she will be very happy. She mixes this and eats similar stuff for her lunches.

I just thought this piece of vegetable is just too beautiful not to show! Isn't Romanesco broccoli / cauliflower so captivating?

Boulud Sud's Mediterranean Mezze

This is a "Monday Night's Only" Classic NYC Dishes masterpiece. A combination of Herb Falafel, English Pea Hummus, Sheep's Milk Ricotta and House Made Socca Chips. I heard people really the falafel here.

A peep behind the Socca Chips, chopped olives on English pea hummus. I like the hummus and it goes well with the socca chips and falafel.

Seared Diver Scallops

This was the appetizer portion (main course portion available too) of a very delicious scallops. Nicely seared scallops that was served with crispy smoked bacon! Every since I was introduced to hand picked scallops picked by divers, you pretty much want it when you see it. (My sis will agree with me about hand picked scallops!)

It was nicely seared on the sides and tender and juicy inside, the picture above and below both hides the nicely done scallops. (It takes practice to do this, I have ruined lots of scallops trying to do this at home. )

A top view of it, the scallop was resting on English Pea Mousse and whole peas and surrounded by Carrots Lemon Chicken Jus. DB is American and so is the chef. Carrots and Peas are something they grew up with. I think Americans will love this. A quail egg rest on top giving it a nice pretty touch.

Saffron Tagliolini

Chef Jonathan was saying that he tasted one of the chef's spanner crab dishes at recent Epicurean Market and was captivated by it. He thought he will use spanner crab as one of the ingredients for his dishes. This is it.

The saffron pasta is from Chef Daniel's recipe. Other ingredients includes tomatoes, chilli, Italian Parsley and Lemon and Olive Oil. I am sure you can imagine the taste profile from the ingredients listed.

We had the appetizer portion. (also available as Main Course portion). If you like pasta and one that taste a little tangy, a little hint of heat (spicy kind) with some simple seafood like spanner crab. This might be your kind of pasta.  A nice alternative for those who don't like tomato based version of pasta.

(I like that plate!)

Herb Roasted Organic Chicken Provençal.

This was one awesome chicken that we tasted! Yes, if you remember about the French Chicken, born in French, grew up in Malaysia and cooked in Singapore in a previous post, it's the same breed of delicious chicken.

The chef brought out the chicken that has been nicely roasted for us. On the same pan were Heirloom Beans, Carrots and the herbs stuffed in the cavity of the chicken that was used to roast it.

It's not ready to be eaten, but we were already salivating when Chef brought it out for us to view for like 5 seconds before it was taken back into the kitchen.

While the chicken was cooking, we had Sancerre Rouge, Les Romains, Gitton 2008 to go with the chicken.

Chef came back with the chicken and poured the sauce made from reduction of wild mushrooms and natural chicken jus. (with other things that I can't taste haha)

This dish is something that you should try and get truly satisfied. It's good quality chicken, so no matter which part of the chicken you have, it's very enjoyable. The texture of the meat is just so tender and succulent.

The sauce which has the very flavourful chicken jus and wild mushrooms really makes you want to lick up every drop of it. I really liked the beans and carrots too. It's one of the must orders here.

Executive Pastry Chef Benjamin Siwek

I think this guy is bold! He's making interesting desserts and using the King and Queen of Fruits! Yes, durians and mangosteens! Not only is he using Durians, he is using Jackfruit another fruit that has a strong smell in his desserts!

Milk Chocolate Mousse Cake

It just reminds me of a scouts bonfire. No, it's not going to be flambéed. It's plays with texture and taste for chocolate lovers. Crunchy and smooth bits with different kinds of chocolates.

Durian "Royale" Soufflé‎

Ooops, when this was served, we were busy eating the previous dessert, we forgot the soufflé‎ will sink. Caught it in time before everything flattens. This was durian soufflé‎ from a French pastry chef! We were told by MBS PR lady, they had lots and lots of versions before they could settle with this one.

My parents would probably not have it because they will only eat their durian by the fruit and in nothing else. They always wondered why people even eat durian ice cream when you can get fresh durian. They will freeze durian if they want it cold and ice cream like.

The wife who don't eat durian might eat it if she has it with the mangosteen sorbet (on the right) together with the durian soufflé.

The durian smell is not that strong until you put it in your mouth. If you have the mangosteen sorbet, it kinds of mask the smell of durian after.

Rhubarb Tart.

Sorry, but I am not a fan of rhubarb. To me, it's just not my kind of food. Rhubarb to me is tart. So it's a tart tart. I am not saying the above is not nice, it's just not for me. It's my brother's kind of food. He orders Rhubarb whatever when he sees it on a menu, something which I can't fathom!

I know there are fans of rhubarb out there just like my brother, so this is for you!

Jackfruit Verrine

Chef has used local ingredients we are familiar with and make them into a nice little French-Peranakan dessert! Made from Coconut Tapioca, Lime, Jackfruit and Palm Sugar Ice Cream.

French dessert techniques and local ingredients. Something that works and works well for me.

This dish is available during Lunch / Dinner time.

Signature Petit Madeleines

Always a nice little sweet touch to all meals at db Bistro Moderne.


It was a very interesting night of tasting the food of the new team at db. Some of the food we had are available on Monday nights. Others are only available for dinner. Do check out their website for more details.


Baby Sitting by Chef Benjamin Siwek
For parents who are wondering how to 'deal' with the children during the coming school holidays, here's some good news. Let Chef Benjamin Siwek baby sit them! He's conducting the db Bistro Moderne "Junior Pastry Academy".  A series of specialty pastry workshops will take place at 3 PM across the five Saturdays in June. It's opened to children aged 5-12 years old! The 90 minute session will focus on different theme as follows: 1 June - Yogurt Cake, 8 June - Brownies, 15 June - Cupcakes, 22 June - Cookies, 29 June - Candy Bars.

Priced at $75 per child, this includes sweet treats and champagne for the child's accompanying parent. For more baby sitting details, contact db Bistro Moderne.

Mondays in Lyon @ db Bistro Moderne, Marina Bay Sands

The weekend has just ended, and we are all back at work. Some of us feel very energetic, I do! (because I do really love my day job and my colleagues) Some might feel so tired and lethargic after having a relaxing (or maybe hectic) weekend.

Food, some really nice good food at the end of Monday will bring you back to good spirits. db Bistro Moderne had Mondays in Provence few months ago. For the months of November and December, they are having "Mondays in Lyon".  Lyon is Daniel Boulud's hometown.

I always enjoy their in-house baked breads here.

"Mondays in Lyon" is a 3 course dinner set at $68/pax.
Available only on Mondays and ends on December.

If you add $32/pax, you will have a glass of red and a glass of white to pair with your meals.

Plateau de Charcuterie

You know that there's different quality of cured meats, and the version here that I have tasted always taste very good. What was on the platter? Grainy mustard in the little cup, guinea fowl, parma ham, saucisson, duck proscuitto, duck terraine, foe gras with quiince, pickled turny and lomo.

If you really like this stuff, go with your date / partner / friends who love it and choose the same starter, they will put it all in a big platter. If you like to have choices, maybe choose the following...

Soupe A L'Onion

Classic French Onion Soup with gruyere cheese. This beef based soup was so flavourful and it really warms you up. I am an 'onion' person, so I love this soup. They also top it up with a generous amount of gruyere.

If you try to make caramelized onions at home, you know how long you have to take to caramelized the onions properly to a decent colour.

Salade Lyonnaise

Of course they will have the Lyon Salad since the menu is based on food from Lyon!

This will be the wife's favourite. The thing she loves are all in it! (She's a salad person).
It's frisee salad, chicken livers that's done just nice, thick pieces of fried bacon, poached egg that you can break the yolk to let it flow..., croutons, mustard and carrot dressing.

If you opt for the wine addition, you will be delighted with the Les Laurelles 2010.

Cabilleaud Poche

If you are a fish person, you will love the poached cod and fish mousse quenelles they serve here.

The cod was so tender yet still firm, it had been poached so nicely. Fish mousse quenelles (the two light brown thing beside the cod above) might remind you of our fish cakes, but it's softer and tastier than fish cakes. It's something well known in Lyon.

It's served with Nantua sauce, a classic seafood sauce made from shellfish and cream.The sauce has been so well prepared, you would not want to waste any of it!

Poulet Au Vinaigre

Oh, the sauce from this dish was so so good, that I can't get enough of it. When everyone was done, I discreetly scoop more sauce that was still on the serving platter and put 1 or 2 more mouthful into my mouth! I wonder how long they must have been cooking to get this reduction. (A French chef from the restaurant at the 70th floor who recently taught me cooking said that it's not possible to create a decent sauce if you have less than 1 hour).

It's hard for me to describe the sauce, it was creamy, a nice fragrance that's smoky but not burnt, a nice umami flavour that you get from the cherry tomatoes and overall a nice acidity that makes you want to pour it over rice. It's a good thing that they served it with rice.

Did you realise I describe the taste of the sauce first? It was so nice, I remembered it most. The chicken was nicely done. The use of cherry tomatoes gave it a nice twist too.

The chicken dish was served with Tarragon Rice Pilaf.

Nice, fluffy basmati rice that had been nicely flavoured. It's so good on its own you don't need the chicken to go with it. It was made better with the chicken and the sauce.

Talking about the chicken, I asked the service staff what chicken they used. She came back and said that chef said that it's French born chicken that has been raised in Malaysia. They live a happy carefree / free range live and finally get slaughtered and served in Singapore.

(My aunt told me they sell these French born, Malaysia farmed chicken in a few supermarkets now as well, I have not seen it, it's probably sold out when I visit supermarkets at night!)

Chicken lovers should try this dish!

Gratin de Cardons "Dauphinois".

If you are vegetarian, there's always a vegetarian dish on the menu.
It's cardoon and potato gratin, mushroom Fricassee, fresh herbs. What's a cardoon, we had to google while eating and found out it's related to artichokes. It looks simple and boring, but it does pack a punch!

Ile Floattante

Meaning Floating Island,  it's poached meringue. Poaching it makes it so soft and still firm. It's served with Vanilla Creme Anglaise and topped with pink pralines.

Coupe Chocolat Et Marron

Chocolate lovers will like this. It was 3 scoops of ice cream. 2 scoops of chocolate ice cream and 1 scoop of dark chocolate. Since Valrhona originated from near Lyon, they used Valrhona chocolates!

An interesting add on to the ice cream is the candied chestnut. I wonder if it's the Marron Glace, which I think it is, did not ask them while we were eating. I assume it is since it's from Lyon as well.

Apple Tarte Fine 

Oh look at the layers of puff pastry! It's so pretty isn't it?
That's apple compote at the top right of the photo and a scoop of really strong Cognac ice cream.

It's nice to see Chef Stephane Istel again. He's such a jovial fella. I guess a happy team with him makes happy food that all will enjoy.

It's Monday today and if you are game for a little adventure to Lyon via your tastebuds tonight, pick up your phone and make your reservation now. It's a very nice 3-course meal that is less than a hundred dollars and it's something I am sure you will enjoy. I sure enjoyed the meal.

db Bistro Moderne - Mondays in Provence

Forget Monday Blues! If you haven't heard about it, on Mondays when you visit db Bistro Moderne, you can ask for the Mondays in Provence menu!

(Provence is a region of south eastern France on the Mediterranean adjacent to Italy. If you want to read more about it, head to Wikipedia)
 
It's interesting how they come up with the Provence menu. It's a three-course meal that's inspired by dishes from the gastronomic regions in France. Dishes that originated from Nice to Marseille, it was traveling southern France on our tastebuds! For the full menu, you can refer to the db Bistro Moderne's website.

Thanks to Marina Bay Sands and db Bistro Moderne, a few of us bloggers were invited on a Monday (of course) to sample the Provence Menu.

Mondays in Provence is offered at $68 per person.
(For an additional $32, pair the menu with regional wines.)

Le Pain

If you have been to db bistro moderne, you would have love their breads. I particularly liked the one that has a slightly salty crust. It's very good!

I did not ask, but I wonder if the bread here is from the work of Mark Fiorentino (or rather the recipe and methods, since he's obviously not in Singapore), the great bread man that takes charge of all the bread at the various Daniel establishment. 


Hors D'oeuvres - Provençal canapés

There was 3 different canapés that we were served. It's something very different and excites your taste buds for more.

- Tomato compote, basil pesto and smoked mozzarella crostini
- Eggplant and goat cheese crostini.

The 'Caramelized onion and rosemary tart' above, was my favourite, yes, I am an onions person and the caramelizing onions is not an easy job.

Soupe Au Pistou (Provençal Vegetable Soup with Pistou) 

For those who likes to start their meal with a light vegetable soup. This was made with coco beans, summer squash in a vegetable broth with basil. It's like a minestrone without the tomato paste.

Tasting squash in soup makes me think of the my Year 12 days. All of us used to hate squash because the kitchen lady prepared it in a way that all students hated it. If only the chefs learned how to cook it!

Petits Farcis Provençaux - Provencal Stuffed Minis

If you are a meat person, try theses stuffed zucchini, eggplant and cippolini onion. Yes, they are all petit!

I like the stuffing that was made from minced lamb and beef. It had been seasoned with grilled peppers, onion, zucchini, rosemary, thyme, garlic and rice and topped with breadcrumbs. The stuffing was really moist and it's something that you would 'steal' from your neighbour who still has it on their plates!

Salad Niçoise
The original salad originated from Nice. This is how db has made it more delicious.

 If you like tuna confit and seared tuna, opt for this salad. It's Tuna done two ways, julienned bell peppers, olives, potatoes, green beans with anchovy dressing. The quail eggs that had really soft yolks were a nice touch to it.

You can choose 1 of the following 3 dishes for your main plate.

Bouillabaisse. A traditional Provençal shellfish and fish stew from Marseille.

It's a seafood stew that will really make you not waste a drop of the precious broth. The seafood used was John Dory, Red Snapper, Pernod and Tiger Prawns. Together with it was fennel and tomato confit and potatoes that had been cut the size of the chunks of seafood.

Chef Nicholas said that for that night, he was being a bit generous and added scallops too. So if you are having this dish here, see if the Chef is generous to you too.

The Saffron Rouille that was accompanying the delicious Bouillabaisse. It's made from roasted capsicum, egg yolks, parsley, potato, garlic and olive oil.

Raviolis A La Daube D'Agneau - Lamb Stew Ravioli.

Oh, probably the most luxurious ravioli I have tasted. Braised Lamb that's pulled and delicately made into a ravioli. The lamb jus, rosemary and red wine that is so delightful rich accompanies it. I believe it has been reduced so it's a tad salty. Perfect who will be pairing it with the wine.

Ratatouille De Legumes & Panisse

It's not Remy preparing this dish behind Chef Nicholas' hat!
It's a delicious vegetarian stew that's made from tomato, zucchini, eggplant, onion and bell pepper. The crispy chickpea cake was a nice touch on top.

The pastry and dessert chef describing to us the dessert that made us salivate even before we have it!
There are 2 desserts to choose from, but sometimes, they might just present something different if they have fresh ingredients that just arrived. That night, the pastry chef decided on Apricot Clafoutis instead of Tarte Tropezienne.

Apricot Clafoutis

We had this delightful warm apricot clafoutis with an almond tuile disc on top, honey marinated apricots and bourbon foam. It was served with a scoop of almond ice cream on the side.


Not the usual black cherries versions. It comes out very nice. The clafoutis batter was made from roasted hazelnut powder.

Mousse Au Chocolat Au Lait.

Oh, what I like was the lemon-hazelnut ice-cream.
The dessert was made with chocolate hazelnut biscuit, praline gelee, milk chocolate mousse, praline glacage. On the side was cherry gel. Does it sound like it has a million calories? Try it!

We ended the meal with the signature warm Madeleines. This little things, you can pop it non-stop!
