Punjab Grill by Jiggs Kalra @ Marina Bay Sands

Many of you who have walked around in Marina Bay Sands would have noticed this Fine Dining Indian Restaurant and probably did not go in. We were there recently to try out a special festival menu, the Kashmiri Festival. The festival is from 16 - 24 April, so if you want to try the Royal Kashmiri Cuisine, you got to try it quick.

I remember when I was doing my post graduate studies, I did a project with 2 PhDs students and it was so interesting because I partnered with a Pakistani and an Indian. In between project discussions we get to listen about the Kashmir Conflict! There are just too many stories to tell, but I shall save it for next time. This post will be filled with photos of the Kashmiri Cuisine instead, to tempt you to try!

I have to confess I don't know much about fine dining Indian food as the Indian food I have is the usual stuff I have at Singapore or Malaysian restaurants and not from India. So obvious I am quite ignorant about who Jiggs Kalra is until I googled about it. You should too!

Maybe I should visit other places to try out more India version of Indian food. The wife who was recently at Hyderabad for work trip said that their Briyani there is so good. Even the food served in their office canteen is very different from what we usually have here.

The crackers that was really crispy. I could not catch the name, but it was addictive.
I call it a cousin of 'keropok', it's crispy and I just kep eating it with the dips below.

Wondering what to order for drinks, Mr Manu the restaurant manager said he will serve us some in shot glasses. Left: Salty Yoghurt aka Mattha was interesting. It's an acquired taste, after the third or fourth sip, then my brain said it's ok. Centre: This is called Spicy Water aka Jaljeera. It's basically a chilli based drink, and this non-Indian tongue can't take it. The flavour jolts me up too much. Right: Saffron Pistachio Lassi. This is my favourite of the 3 drinks. Sweet and smooth!

We were told the menu's Royal Kashmiri Cuisine. This is a fine dining restaurant, so this is the Amuse Bouche. Pretty fancy eh?

Bhune Badam Ka Shorba

This was the first course we had. It's roasted almond soup. It's very good. The 4 of us who drank it wondered if there's like mushrooms or anything else inside. It has the texture and even slight smell of mushroom soup. The chef said no. It's almond that had been roasted, milk and some spices.

Next came the various Appetizers:

Left: Kashmiri Kukur Tikka. It's chicken thigh marinated with Kashmiri Whole Red Chilli Paste and Green Saunf Powder (fennel) and cooked in a clay oven. We were told the Guest Chef brought all the Kashmiri spices over to Singapore. It's spices that is hard to find in Singapore.

Middle: Tabakh Maaz. This is Lamb ribs marinated with aniseed powder and saffron milk. It's done in a traditional Royal Kashmiri style of cooking. We were told the same pieces of meat goes through 3 different cooking processes and the last step before serving to us.

Right: Wazwani Handi Aluv. It's potato marinated with fennel powder, ginger garlic paste and Saffron Kewda Milk cooked in the clay oven.

I love the chicken and the lamb! Very nicely done.

Kashmiri Tsaman Sarson Tikka.
A nice cube of paneer tikka infused with Kashmiri yellow chilli powder and mustard oil. Quite an interesting taste.

Nadru Kabab

It's a signature kabab of the Kashmiri Valley. Pan grilled lotus stem marinated with kashmiri red chilli dust and roasted mint leaves powder. They also had some herbs that when I ate it reminded me of incense. So we asked the chef. It has sandalwood powder inside as well. That explains. No, not my kind of food. For some of you, you might find it wonderful.

After the appetizers that activated all our taste buds we had a special sorbet to cleanse our tongue. Just the appetizers and our taste buds have tasted so many kind of different flavours! My mind's confused. LOL

Now to the mains and we were served this breads from the Kashmiri Bakers.

The Naan is made from whole meal flour and has saffron stands on it. It's really quite nice. It has a nice toasted flavour and has a nice aroma to it too. The bread hidden below is made from refined flour and has fruits and nuts in it. Very filling, so don't take too much before the main meal!

Gucchi Pulao

This basmati rice with jumbo morels and royal cumin cooked on Dum under flaky puff pastry. This rice is so good! It kind of reminds me of the basmati rice that I watch on TV recently the extravagant Indian weddings serve.

Don't eat it first when the rice is served. There are more things that will come!

It's a huge plate and it's a lot of food! Very rich and creamy too. So we were really really stuffed by the end of the mains.

Gushtaba

This is lamb dumpling with fennel and green cardamom in a creamy sauce. I admit, it was not for me. I don't usually like lamb and the texture of the ball was chewy. That proved my ignorance! The chef came later to asked if we liked it. The meat was pounded by hand and it was hard work making this. Made me felt bad and I ate more of it to not waste the person's effort. (don't laugh at me!)

Gadh Palak. 

Fish cooked in fresh spinach puree, tempered with mustard seeds. This is so good. It looks mushy, but when you bite into it, if you are like me love spinach, you will instantly fall in love with it. The fish is done just nice too.

Rogvan Josh

This the the in house specialty of Rogvan Josh. The meat's from the shoulder of a baby lamb cooked the old fashion way, which is under very low heat. Cooked with a mix of fennel powder, red chilli powder and freshly pound spices. The guest chef said, it's done the most original way and if you taste anything different elsewhere, it's not the true version. Wah....

It indeed is very good! The naan and bread comes to great use now. Mop up all the sauces!

Dum Aluv

This is potato simmered with fennel seeds, dry ginger and Kashmiri chilli gravy.

Kukur Hindi Rogvanjosh

This is the chicken version of the famous Brahman Roganjosh. It's nice, but the lamb version seems to be nicer. This coming from me, who seldom eat lamb!


We were already quite full and there's still the desserts to come. The sets are quite good value if you consider the list of food you get to try. Here's the desserts we had:

Chukander E Afroz

This is beetroot halwa. If you like beetroot, try this. It's something very different and it's a dessert! It's surprisingly not that sweet. I always thought Indian desserts are super sweet!

We thought that it tasted familiar although I have not had it before. Something inside made it quite familiar. We asked the chef and he said, there's a bit of condensed milk in it. Aha!

Left: Apple Caramel Kulfi. Home made Indian Frosty infused with Caramel. It melts quickly so hurry up and eat it up! Yummy!

Middle: Shufta. IT's a roasted nuts and cottage cheese pudding.

Right: Beetroot Halwa.


The meal ended with this delicious and wonderful fragrant tea. It's the Kashmiri Kehwa Tea.

Then the guest Chef's assistant came with a very traditional tea pot! It's very hot and the tea was poured into our glasses.

You know the traditional steamboat pot we are used to? This pot is almost similar. The middle part is where they put in hot charcoals!

This tea is so soothing and it's so good for aiding our digestion. There's no sugar in it, yet it's has a slight sweetish taste.

The chef in white is Chef Javed who is the Exec Chef of Punjab Grill. Even after this Kashmiri Festival is over he's here to cook you delicious Punjabi cuisine.
The chef in black is the guest Chef, Chef Rehman Mujeebur. 

So if you think this Kashmiri Festival is quite interesting, come dine here by 24 April 2014.

Magic of Mangalica Pork @ Clifford, The Fullerton Bay Hotel.

If you have the love for all things porcine, you probably would have heard of Kurobuta, Berkshire, Iberice, etc. Have you heard of the Mangalica from Hungary? It's known for its rich, buttery fat and delicate taste.

If you do an online search for the Mangalista Pig, you would see it has lots of hair and it looks like a sheep! It was a popular breed long ago when lard was order of the day. Hungarians cooked using lard and this pig has lots of it. Then because of health reasons, people switch to different type of oils.

The wife and I had a nice 2 person date night here just last week. This was a invited session by the hotel, but it was just the two of us having a meal under the lovely high ceilings of the restaurant. This place has a nice view of the Marina Bay too, a nice place to have a date and watch the sunset.

We love the breads here. You can guess who ate which bread. The lady always love her grainy breads and I love prefer a simple mini baguette.

Someone asked me on Instagram when we dined there the other day, if Clifford uses French butter, so we asked. They are using New Zealand ones now. No, the F is for Fullerton, not Facebook! We now who the Facebook addicts are now!

Duck rillette here is quite addictive and let me warn you, you will eat it non stop.

For the dinner, we were served the following dishes that had components of Mangalica Pork.
It was quite fun as we had a copy of the menu, but we don't know what was coming out.

Back Bacon Farm Salad ($28)

The wife who loves salad thinks this is brilliant. It is garden greens with scrambled organic egg, so it's a nice warm salad and the dressing is a truffle dressing. The salad has back bacon from Mangalica Pork that's very delicious.

Most eggs in salad are hard boiled or poached eggs, this is a nicely scrambled egg and mixed together with the bacon and salads.

The Mangalica and Iberico Cold Cuts ($32)

If you are a fan of Charcuterie, you would like this. It's toasted with toasted rye or other farm breads and pickles. I like the Mangalica while the wife likes the Iberico.

This was rather addictive as I ate slice after slice of it. The pickles went well with it too. I love the crispy rye that has been toasted. It goes so well with the cold cuts.

It was nice of the Chef to say hi to us. We had a quick chat about this pork and he got back to cook more surprises for us.

The Pasta ($38)

If you like Black Squid Ink Pasta, try this Tonnarelli here.  Served with white prawns and Mangalica sausages, this dish is very delicious indeed. If there's one dish for the night that the wife can eat over and over again, this is it. She's a fan of squid ink pasta and I usually don't think it's any special. This however got me eating a few more mouths than usual. It's the slight acidity of the tomatoes that gives the dish an umami and at the same time cut through the richness of the sausage.

There was a service staff here that we talked to, he said, this is really good and his girlfriend is a fan of squid ink pasta and he himself has made a reservation himself to have this with his girlfriend.

Parmesan Breaded Loin ($42)

Theses looked like deep fried meat balls when they are served, but it's chunks of pork loin that has been deep fried. It's also served with truffle salad. There's quite a few pieces of it because it's a main meal portion.

This is how it looks inside, juicy inside! Reminds me of tonkatsu. It is actually, the same cooking style, except it's from Hungarian pork.

Grilled Pork Chop ($42)

If you don't like deep fried pork loin, you might want to try this grilled pork chop. It's another of our favourite for the night, together with the Pasta. It's served with potatoes with coriander sauce, french beans and a tomato salad.

Look how nicely it is done. The charred fats from this pork is very tasty.

Just as we ate halfway through it, I remembered to take photo of this. Looks good ya?
This pork that we tried did not have the strong gamey smell, and the meats are nicely marbled and had quite a nice texture.

The other special Mangalica dishes on the menu includes:
- Homemade Mangalica Collar Sausages and Braised Ribs.
- Braised Mangalica Belly

I think I want to return before the promotion on our own to try the braised ribs and braised belly. It sounds good doesn't it?

I could not resist not trying the Lemon Tart.
It was not sour enough for the wife. She loves the super sour ones that really gives you the kick!

If you want to try out this Mangalica Pork, head down Clifford before 31 March. The usual menu is still available, this is just a supplement available for a limited time. The night we ate was only the start of the week, and the brasserie was quite filled up. So, make your reservations.

Festive Feasting @ Clifford, The Fullerton Bay Hotel, Singapore

It's December and if you would like to indulge in some French flavours for the Christmas or New Year Season, here's what the wife and I had recently at Clifford, the French Brasserie located at The Fullerton Bay Hotel, Singapore.

Clifford has very high ceilings and glass windows that lets you enjoy the beautiful Marina Bay view. It has a nice luxurious yet casual decor and the following feature which is a personal thing. The tables are of a nice size that there won't be clutter on the dining table even after all the cutlery, glasses and even your iPad mini on it.

KopiKosongGirl and I were here for an 'unhosted' dinner, (ie, just the two of us) with a special festive menu that showcase different dishes that's available for this festive period, Christmas and New Year's Day.

F stands for Fullerton, but it also stands for French butter. These are unsalted butter that accompany the pork rillettes that goes with the warm rolls when you dine there.

We were pleasantly pleased with their warm rolls here. Mini baguettes and multigrain rolls. Nice and crusty on the outside yet was soft and fluffy in the inside. I like the mini baguettes while the wife said the multigrains were good. You don't really need the butter or rillettes to go with it as it's nice on it's own. Control yourself....

We did not order anything alcoholic but went for the mocktails - Lychee and Cucumber based ones that we were told is their special and is very popular with many of their diners. The person who took our order (I think he was the mixologist) just as he was walking away, turned back and asked if we are sure we don't want any booze in it? Haha! He was a funny guy.

The restaurant manager who later walked pass saw we were having mocktails while other tables all had wine glasses, said that everyone who dines here has to drink 'the' white wine that is very good. He offered some to us and the wife who usually enjoys wines more than me said it was good and had a second glass.

Foie Gras Two Ways:
Available in the Festive 4 Course Degustation Dinner from 27 Nov - 23 Dec, 26 Dec - 30 Dec.
$95++ per person / $268 ++ per couple with a bottle of Champagne.

This was foie gras done two ways and served on the same platter.
This side is Pan Seared Coffee Dust. For those who like a chunk of foie gras and just simply seared. This was dusted with some coffee 'dust'.

The other side of the platter was Foie Gras Terrine served with Brioche and I personally like this better. It's lighter and I prefer a mix of different kinds of textures in my mouth as I eat it. Very nice!

It's good that it's done two ways, so you get to try both versions and have a little conversation with your partner.

Seared Scallops:
Available in Christmas Day 6-Course Degustation Dinner.

Something that both the wife and I love. Scallops especially large ones just appeals to us. These were quite huge scallops too. We asked the service staff about the origins and they told us it's Hokkaido scallops.

It had been nicely seared and then served with saffron sauce and some caviar on top. I am now admiring the sear as I type this and realised they had also wrap the scallop with a think layer of something. I forgot to note down what it was.

This was so cute. Both our plates look slightly different because one was a male and other a female langoustine. No no, I am just joking. We can't tell because it has already been seared and then peeled for us.

This guy does look handsome doesn't it? Nice antennae it has ya? It was served with celeriac done in different style and citrus chives jelly on the side.

A bit of an indulgence. A very rich flavoured lobster bisque with cognac.
The wife absolutely adores it. It was served with a lobster ravioli.

Vin Blanch Poached Turbot:

$95++ per person / $268 ++ per couple with a bottle of Champagne.

Turbot is getting popular with many chefs. It has a very nice firm texture and flakes nicely as you cut into it.

The turbot has been blanched in wine and then serve with Grenoble's Sauce of Lemon Caper. (Grenobloise sauce originates from Grenoble in France and it's nice with seafood)

Mont Blanc:

The wife and I were just thinking about a trip to Paris earlier this year as we had the Mont Blanc. A chestnut cream snow meringue served with caramelised chestnuts.

For those like me who love sweet desserts. Wife is a savoury dessert person so I finished up her portion. ;-)

A nice chocolate and raspberry dessert made from 64% Manjari Chocolate with Raspberry Jellies layers. With Cocoa Nip Tulip. Kind of a red dessert!
