MasterChef Dining & Bar in Singapore @ Ash & Elm, InterContinental Singapore.

If you are a fan of the MasterChef series, you must.. must.. must.. have heard of the MasterChef Dining. The wife and I were strolling in Sydney way back in 2011 and we saw a huge MasterChef Pop-up at the St Mary's Cathedral Forecourt. We managed to take a photo with Adam Liaw, but sadly it was a sold out event so we could not dine there.

MasterChef Dining and Bar is coming to Singapore from 25 November till 9 December 2016!

Chef Marco Pierre White is coming to Singapore and a few other MasterChef personalities from around Australia, Asia and United States of America will be coming to town. It is the first time Marco will helm the MasterChef Dining and Bar Pop Up.

Oh yes, the MasterChef Dessert Guy, Reynold Poernomo (left, photo courtesy of MasterChef Dining) from MasterChef Australia Season 7, will be here too. I love watching him plate Desserts.

He reminds me of Marcus Low from MasterChef Asia. I wonder if Marcus is coming too. Marcus and Lennardy were two of my favourites!

I read that Reynold has opened KOI Dessert Bar in Sydney. Reviews vary, but when he's here, I am sure it will be top notch as he will be here in person!


For the MasterChef Dinng and Bar Pop up in Singapore, Ash & Elm, at the InterContinental Singapore would be hosting it. It will be in an open-kitchen restaurant setting so we will get to interact with the Chefs.

The ticketing details:

20 October at all Sistic outlets.

Early bird pricing for purchase of tickets between 20 October - 27 October
$138+ (Lunch) / $248+ (Dinner)

28 October onwards:
$168+ (lunch) / $288+ (dinner)

Daily lunch sessions will feature a 4-course menu while daily dinner will be a 6-course affair. There are only over 200 seats available for the 15 day pop up event. (I read the pop up in London was sold out in 4 days when it was first launched in London).

A for Arbite, A for Amex's #30liciousAmex deals

If you have not read about the American Express #30liciousAmex deals, you probably have been having a nap for too long. Well, it's not too late to find out.

American Express and HungryGoWhere jointly present 30licious - S$30++ culinary treats for 30 days from 3 November to 2 December 2014. It's their little treat for Amex card holders. I have tried the  #30liciousAmex meal at A for Arbite and it's pretty good!

(If you don't  have an Amex, you top it up to S$35++)

I recently went to A for Arbite with the Amex and HungryGoWhere folks to try out their $30 dinner deals. This is my report of the place and I think I will be back for more of their other food. I see things in the regular menu that the different family members at home will love.

Back to their #30liciousAmex deal here, the set dinner consists of a Starter, Main, Dessert and a drink as well. Quite a good value if you have been eating out. The set meal is for at least 2 persons, so you can get to taste everything you see here!


1) Starter (Soup of the day or Duck Roll)

The Soup of the Day we had was the seafood soup. I personally love tomato based soup and this was nice. It had a nice viscosity and it was quite rich and hearty. It reminded me of a French bouillabaisse. A version without all the loads of fish and seafood required in a bouillabaisse, but excellent enough for such a deal.

If you are not a soup person, try the Duck Rolls. They have done this version rather well. It's like a Ngor Hiang that is made from duck. Rather interesting I would say. Duck rilettes with dried mushrooms, water chestnuts and grapes!

Nicely crisped on the outside and they have pickles to counter balance the rich taste of the duck. The chilli gastrique is where the crispy duck rolls are resting.

2) Main (Salted Egg Crab Pasta or Beef Stew)

Salted Egg Crab pasta sounds like what you like? It that sounds utterly sinful, it's not that 'strong' in the saltiness scale. I will say it's the healthier version. The pasta they use is Zita pasta and it has salted egg, crab meat, chilli and hints of curry leaf flavour all mixed in. It's also served with a  piece of deep fried soft shell crab.
 
This is the lighter of the two mains.

If you like a bowl of hearty stew. Try this. The Beef Daube. I personally love this dish more as I love the flavour of it. Beef Shin with celery, carrots and red wine. Braised till it is just tender and not too soft and mushy. It's so pretty how they plated the dish with fried onion rings stacking on top of each other.

(I took a peep at the usual menu and this dish already cost $25 and the crab pasta $24.)


3) Dessert (Edith's Mess or Honey and Date Crème Brûlée)

Edith's Mess is a very interesting and beautiful mess indeed. It has the slight tartness from the passsionfruit jelly, the sweetness from rock melon ice cream. If you want some crunch, the honey comb brittle gives you time to chew while your dinner companion talks! I love the honey comb brittle and the rock melon ice cream!

Honey and Date Crème Brûlée is for those who likes a twist to the usual Crème Brûlée. This version enhanced with dates and honey. Quite a good combination.

The meal also comes with a non alcoholic drink that you can order from the menu. Quite a good deal, if you have tried this place, I think I will be back for the other regular food on the menu. It's looking very tempting and the chef is pretty good.

Ramen Keisuke Tonkotsu Four Seasons @ Bugis Village

Ramen fans in Singapore rejoice. The folks from Ramen Keisuke has opened their fourth branch in Singapore. One thing about Chef Keisuke Takeda is that he does not like to do the same things.

He has many branches in Japan and now with the 4th branch in Singapore, all of his branches sells different things. The broth is made differently, the noodles are different too. Many restaurants add new stuff to their menu, to me, Keisuke adds shops to introduce new things!

This fourth branch in Singapore opens on 10 May 2013 and I can just imagine the snaking queue that will form like his other branches. This branch is called Ramen Keisuke Tonkotsu Four Seasons. Four seasons to represent what Japanese are very proud of, their 4 seasons that have different festivities.

The wife and I with a few fellow foodie bloggers were there before their official opening today to try their ramen. Thanks to their PR folks for the invitation. Here's what you can expect:

This is probably their nicest branch other than the Parco branch. The kitchen here seems to be bigger than my favourite branch at Orchid Hotel.

As you enter into the restaurant, you can experience the four seasons via the drawings on the walls! Can you see which is Summer, Spring, Autumn and Winter? They have cleverly carve the restaurant into 4 different sections.

They have artist draw on the wall directly and we were told the guys just took paint and drew on it straight away without outlining things first!

Reminds me of my childhood home when Dad asked one of his artist friend to paint our outside wall! We had the 'garden of eden' with different animals just without Adam and Eve on our wall!

The brilliant guy behind it all. Keisuke Takeda. This is my first time meeting him in person after tasting food from his various branches. Trained in French cooking techniques, marrying it to make the best Japanese food.

We asked him what was special about this branch. This branch is for those who likes very thick broth. They use 1.5 times more bones when boiling the broth here. They also boil it longer too, 11 hours if my memory serves me correctly.

If you are following me on Instagram (keropokman), I posted a photo of the broth boiling for their first day of service the night before.

When we asked what bones are used for the broth, he told us he uses from four parts of the pig. He only told us 3 parts and said the 4th is a trade secret. I shall not tell you the 3 that we now know. hehe...

If you are like me wondering how the consistency will be maintained when Keisuke returns to Japan. We found the answer ourselves without him telling us. We peeped into their kitchen at the right time and saw his staff using a refractometer to measure the consistency of the broth! Even if eyes and tongues are different, the instruments gives accurate measurement.

Just like in other branches, you order your food on a piece of paper. The Japanese version of it on the other side. Looks familiar ya?

The wife and I with Camemberu and TheHungryCow tried all 5 of it amongst the 4 of us.

Something new on the menu is this Japanese Green Tea Cola! ($3.80) Keisuke like this and he has bottled it under his own brand and is selling it in this branch. It tastes a bit like 7-Up or Sprite mixed with Green Tea. I like it!

On their Facebook page, there's a promo now that says between 10 May - 31 May, if you order a bowl of ramen, you get a bottle of Japanese Green Tea Cola for free!

You can ask for an apron if you want. Big plastic ones. We declined when offered.
What is a beautiful rubber band? It's colourful bands for typing your long hair! Keisuke has long hair so he know guys or girls with long hair need them when they have ramen! So thoughtful ya?

Just like their other branches, they have free boiled eggs and free beansprouts. I love their marinated beansprouts!

If you want to make your ramen the sesame fragrance, you know what to do.

And the noodles......

Spring:
The inspiration according to Keisuke is the colours of spring! (Green and Pink). The green is the basil that goes very well with cheese. The pink is in the bright bowl with the pink spring character.

They had originally wanted to have green shiso, but it is hard to find good quality shiso all year round in Singapore in big quantity so they used basil instead.

How does it taste? It's reminds the 4 of us of having pasta! If you close your eyes and was served this, you might think you are having a bowl of pasta because of the nice parmesan aroma. The taste is nice just that our eyes is telling the brain different things.

Summer:
Summer is hot and spicy! It's a blend of miso, Japanese chilli, Szechuan pepper and Cayenne pepper. It's pork minced that has been mixed with the addictive concoction. If you look and stare into the minced, you will notice small little prawns too.

If you like spicy stuff, you will find it rather addictive. You can mix it in the broth or you can have it on its own with the noodles. It's spicy enough but not killing to me. Reminds me of the fragrant chilli flakes in small bottles that you add to noodles in many Japanese restaurants, just a tad fragrant because of the szechuan pepper and cayenne.

Just make sure you have your first mouth 'correctly' (you know what I mean right, when eating chilli) or you will cough and have to drown yourself with water.

It's very difficult to explain how it tastes. It's like bak chor and yet a bit like hae bee hiam. It's complex, but I think if you try it, you might find it a tad familiar. Tell me what you think!

Autumn:

Autumn's inspiration is mushrooms! They have 3 different types of mushrooms that's fried. Mushrooms if you cook shrink, so it's those small bits around in the photo below. The other inspiration is bonito flakes.

The ball of minced meat you see if a mix of bonito and minced pork. There's quite a lot of bonito in it, it gets you addicted like you know how we sometimes use our fingers to swipe up all the remaining bits in a junk food packet? That's how I can describe the dish.  Very additively nice.

Mix it into your broth and it transform the already nice broth into something greater. If you ask for 'special toppings', you get the extra stir fried pork too! That's very yummy!

Winter:
If you like the version at Orchid Hotel, this is about the same there except it has been made richer and thicker!

Tonkotsu King Four Seasons

If you like the good old Tonkotsu broth without anything additions like basil and cheese etc, you will like this. It's nice and rich, the reason many people who like me who likes thick rich version queue up at the Orchid Hotel branch.

I like to have this with the marinated bean sprouts. I wonder if I can ask for more spring onions the next time.

King:

If you feel like King! This version was my favourite. It has stir fried pork with ginger on top. There's also onions fried with pork which I like. It also has black fungus.

It's like having a bowl of winter above and asking for a bowl of stir fried pork and adding into it! Rather addictive eating the pork slices.

This is probably their biggest seating capacity branch so far. They have 56 seats here.


There's always talk about noodles thickness when people talk about ramen.

Out of curiosity, we asked if they are made in house. They said the noodles are made using their own recipe in a factory in Singapore. It's the same company that made their noodles in Japan. The factory in Japan has opened a similar factory in Singapore to supply noodles to the 4 branches here!

The noodles they use in the 4 branches are different in thickness and shape. Apparently, the noodles served are based on the broth. This branch has very strong and thick broth, so they use thinner noodles here. The science of thickness of noodles so that it just soaks up enough broth to enjoy it the best. Interesting eh?

Festive Feasting @ PARKROYAL on Beach Road

Every now and then, we do think about buffets. It's especially more fun if you have a few friends to eat with you. Just the other day, the wife and I and a few other blogger friends were stuffing ourselves silly at Plaza Brasserie at PARKROYAL on Beach Road.

(If you think Christmas is over and you can't have enough of the Christmas Turkey, Ham, etc. Plaza Brasserie still has it till New Year's Day!)

The wife's favourite! She loves buffets with oysters! The first thing that she 'attacks'!
I usually go for some warm food first meats!

Showing every dish of a buffet can be quite daunting task. I shall just highlight some of their festive offerings. These photos are not from stock photos provided by the hotel, but food that's served to guest to be eaten.

So it's as real as it gets, taken right from the buffet line.

The traditional Roast Turkey with Sausage Meat, Chestnut and Mushroom stuffing.
It's available at the 'live' cooking station.

There's also the Roasted Honey Glazed Ham with Pineapple and Cranberry Sauce.
This year's new introduction to the festive menu: Pork Knuckles.

The pork knuckles are served in Asian inspired Spicy Sauce and Red Wine Sauce.
Other things available at the live station includes Roasted Duck served with Chilli and Plum Sauce.

I had a few servings of sashimi, noodles from the noodle section. I was looking for their chicken rice, but they were serving Fried Rice with Seafood that night.

Here's a list of things they serve for mains. They don't serve everything but most of it every night from this list. Here it goes....  Deep Fried Crispy Eggplant with chicken Floss, Stir Fried Butter Prawns, Braised Vegetable with Conpoy, Crab Meat and Topshells, Oven Roasted Duck Breast Meat with Marinated Cherries, Crispy Soft Shell Crab, Grilled Fish Fillet with Mustard Sauce, Baked Alaskan Cod with Mustard Sauce, Braised Oxtail in Red Wine Sauce, Braised Chicken in Herbs Reduction, Stir Fried Pork with “XO” Sauce, Deep Fried Crispy Almond Prawns, Stir Fried Beef with Thai Mango Sauce, Sautéed Brussles Sprout with Fish Maw and Bacon, Fried Rice with Seafood and Preserved Olive and Braised Noodles with Crab Meat and Mushrooms.

I also love Christmas Fruit Cakes. It's nice, but I have to say it can't compare to my mum's version. Mum knows our tastebuds and add in what we like. ;-)

Here's the Christmas Pudding with Brandy Sauce.
This version for those who prefer the 'wetter' version and with alcohol.

Other selections on different night includes Christmas Stollen, Bread and Butter Pudding, Classic Chocolate Mousse, Raspberry and Vanilla Cheesecake.

There's lots of Christmas cookies, espresso brownies, pecan pies, mince pies, gingerbread as well.

Something I would like to highlight for ice cream fans. If you remember once upon a time, Cold Storage used to sell Kapiti ice cream. I loved them and one fine day, they were no longer for retail sale. Well, the buffet here serves Kapiti ice cream. Eat all you want!

(Hint, the ones in black tubs are Kapiti ones. Usually out of the 3 tubs, 1 or 2 are Kapiti ones)

Crab Feast Buffet @ Plaza Brasserie, PARKROYAL on Beach Road

Are you a crab fanatic? I know family members who are and the wife can think of friends who can eat crabs non stop at one sitting. This crab news would delight crabs lovers.

Imagine this (I am just highlighting the dishes with crabs) :

Appetisers - Dijon Crab Cakes with Coriander Paste, Baked Crab Shell, Chilli Crab Roll with Vegetables, Crab Meat Gyoza with Dip Sauce, Bread Crab Claw, Mini Crab Meat Samosas, Olive and Potato Crabmeat Balls with Pesto, Crabmeat Paste.

Mains Crabs - Chilli Crab, Black Pepper Crab, Nonya Curry Crab, Butter Crab, Stir Fried Crab with Salted Egg Yolk, Thai Green Curry Mud Crab in Sichuan Style, Stir Fried Flower Crabs with Spring Onions and Ginger, XO Crabs.

Noodles - Crab Meat Le Mien with Miso Paste, Braised Tang Hoon with Live Crabs, Crabmeat Tempura.

Hot varieries - Crabmeat Fried Rice, Crispy Soft Shell Crabs.

Just the other day, the wife and I had the pleasure of being hosted by PARKROYAL on Beach Road at Plaza Brasserie for the Crab Feast Buffet.

To tell the truth, we were so interested in the crabs, we totally skipped the appetisers and had only the crabs. It was only later that we started to have other delicious stuff they have at their buffet like sashimi, laksa and the whole offering of food. 

Here are the photos of the crabs. I asked Ms Chang, the Marcom Manager and she said that every night, diners would get 5 different flavours of the crabs flavours listed above.

Butter Crabs. If you like the fragrance of butter in your food, try this version. It's not white with lots of milky sauce like how many places serves it, but the flavour is quite intense and flavoursome.

The style that was my favourite that night. The Stir Fried Crabs with Salted Egg Yolk. The fragrance and the flavour just goes down well with me. The distinct flavour of salted egg yolks makes you want to eat more of whatever it is cooked with.

Even after a while when the crabs were cold, it still tasted good as I was still wanting more and did not want to waste the crabs in front of me.

Chilli Crabs. With so many choices, chilli crabs though it is nice, gets kicked out one rank.
Some people love eggs in the chilli crab sauce, this is the eggless version. It's a version of more sweetish than spicy crabs.

Nonya Curry Crab. These crabs for the Nonya Curry version are the flower crabs.
Personally, I think Nonya Curry goes better with steamed fish.

XO Sauce Crabs was something very different from the rest of the crabs. It does goes well as XO sauce is made from scallops and other seafood. I have not had XO Crabs before, my first time.

The man behind the different flavours and variations of the crabs, Chef Jackson.
His team must be quite innovative to come up with so many crab dishes every night.

Eating crabs alone has no carbs. However if you need carbs, have your crabs with the deep fried mantous. I was thinking of having non carbs that night, but I succumb when I saw these golden buns.

I also walked around and got tempted with more food, and had a bowl of laksa from the noodles section together with roast pork from another station.

Consider having crab dishes at Kopitiam Zi char around $40 for a crab, and around $80-90 for a crab at higher end seafood restaurants, the prices here if you can eat crabs plus their usual Asian and Continental delights is $52-$55 for adults is quite reasonable.

Kaya Swissroll from Rich & Good Cake Shop @ Kandahar Street

This is one super old school kind of cake shop in Singapore.

A few friends and I were around the area one weekend for tea at Maison Ikkoku. Then suddenly at around 4:45pm, the wife and sis said, we need to go buy the cakes now! Oh, it seems the cake shop closes at 5 pm, and they wanted the cake to be kept cold and so waited until the last minute before the shop closes to buy it.

I was more attracted to the motifs on the door and windows!
I hate the colour of the building though.

Why aren't new buildings having this kind of designs on their doors and windows?
Don't they look so nice?

The design reminds me of my scouts badge. Yes, it's not really and there's a similarity. I can use that design for 'draw something' and fellow scouts might have guessed it! LOL

The disadvantage of waiting till nearly 5pm to keep you cake cold is that most flavours run out!

KopiKosongGirl and sis bought 2 rolls of it, both Kaya flavour swissrolls. One for our in-laws and one for our aunt, both that will fully appreciate this kind of old school swiss rolls.

The most unattractive box, but hey, it matches the colour of the wall of their shop!
A part of the box is perforated so that you can tear out and keep the address and contact details, now that's clever.

It's a long skinny swiss roll. About 30 cm in length and 5 cm in diameter.

Noticed that there's no wastage. They did not cut off the corners to make it look nicer.
Well, these parts can be eaten too. Old style thinking of don't waste food perhaps?
(I actually like ends of cakes hehe!)

We ate it the next day straight from the fridge after our dinner.

Cold cream with kaya between soft (but not too fluffy in my opinion, a bit dense, but its fine and soft though) cake layers makes it quite an enjoyable treat. It's small so 1 piece of it is definitely not enough. It's also not too sweet, which is what most locals prefer nowadays.

Fancy some old school cakes? Grab some only if you are in the area.
Only make your way here on purpose if you have some parents or relatives to impress and you know they will enjoy it better. ;-)
