Hubalicious is back again! 2 - 3 Nov @ Pasarbella

In our household, the TV is tuned only to a channel that shows HK/Korean/Japanese drama or to channels that show cooking shows like BBC Lifestyle (to watch Gordon Ramsay, Eric Lanlard etc), TLC, Asian Food Channel, Lifestyle (for Masterchef Australia) and Food Network Asia. You can tell we really like to watch food related TV and I am sure many of you too!

Starhub's Hubalicious this year is a Free 2 Day Event at PasarBella @ The Grandstand.

Eric Lanlard is a Master Pâtissier and twice winner of the prestigious Continental Pâtissier of the Year at the British Baking Awards.  I am sure you have seen his show on BBC Lifestyle. He makes baking and making desserts seems so effortless!

He will be at Hubalicious! My sis who bakes and loves watching him on TV is very eager to see Eric in person!

This pair of brothers, Henry and Tom Herbert come from a family of food lovers and are fifth-generation bakers! One is very food in baking and the other meats. If you have not caught them on TV, maybe it's time to tune in and see if you like watching them.

StarHub - Hubalicious with Emmanuel Stroobant

Heard of Hubalicious? If you a foodie who watch lots of food channels on TV, you would have seen the advertisement on TV about this event. It's the 3rd year that StarHub is organising Hubalicious!

I attended the very first Hubalicious event in 2010, featuring one of my favourite Vietnamese TV personality Luke Nyugen. Comparing the 2010 event to this year's that I attended over the weekend, the event is now so much bigger with so many more people attending!

This year there are 4 celebrity TV chefs that's hubbing with viewers. If you always wished that television could transit smell and flavours to you, this might be the interim solution till someone invents it!

The 4 are:
- Food Channel Asia's Aarti Sequeira,
- TLC's Bob Blumer,
- Asian Food Channel's Emmanuel Stroobant and
- BBC Lifestyle's Rachel Allen.

I attended Chef Emmanuel Stroobant's because I have been to his restaurants and  always wanted to see how he's like in person!

Another reason I chose Chef Emmanuel's event was I wanted to visit the spanking new W Singapore!

Held at the W Hotel Singapore ballroom, there were around 18 tables! Gulp, so many hungry people around! haha...

Don't you love the metallic shoe on the centre of the table as a show piece? So W Hotels!

While we waited for the event to start, we were nibbling bread!
We were pampered with nice warm bread. I particularly like the small round sour dough bread.

Finally when Chef Emmanuel appeared at the ballroom, the hungry fans all cheered!

Not in his trademark black, he was in a very tight fitting blue shirt that showed off his muscles. The MC for the night, Lavinia Tan was teasing Chef about his muscles. How many other chefs has muscles all over?

Chef Emmanuel went on stage and explained his first dish. It's Grey Shrimp that he grew up eating while in his hometown Belgium. He shared about his time growing up and how he finally ended up in Singapore.

The theme of this year's event is The Heritage Trail. The different chefs will be sharing about what they eat growing up. Tonight's menu is what Chef grew up eating in Belgium.

This starter has such an interesting taste. The dressing gave the shrimps a salty and slightly sweet taste. You can see they are quite plump. The tomatoes I think it was momotaro tomatoes. The shrimps reminds me of very hydrated 'hae bee'.

The night was like a "show and eat" similar to 'show and tell' but with food you can eat after!

The 2nd time Chef Emmanuel went on stage, it was with this man in black. It was Chef Emmanuel's 'everything also can do' assistant Tim Ong.

Reflecting on it now, it was a very entertaining night. The 3 persons you see on the photo above, they were like presenting a stand up comedy! OK, they have potential to be great, but not that great yet, but very entertaining though.

Pan-Fried Haloumi with Caramelised Watermelon

I have not tried Haloumi before so it was interesting that they served this. A very interesting texture I would say. (It kinds of squeaks when you bite it! So fun!!)

When Chef and his assistant was pan-frying the Haloumi, the ballroom smell so good! Ah, like watching TV, but this time with the smell coming though!

The preparation of the watermelon was most interesting. Even if you did not attend, let me share with you how it was caramelised. Cubed Watermelon was pan fried with soy sauce and butter mix! Can't imagine the taste right? Turns out quite well! Try it! (a bit of soy is enough, if you are trying it at home)

Slow-Cooked Salmon in a Rice Cooker

This was another interesting dish. Salmon that has been slow-cooked in a rice cooker!
It's time to put your rice cooker to good use! (You need one that has a Keep Warm function).


Want to make your dishes a bit classy, that black streak was squid ink painted on the plate before putting the salmon on it.

You need sashimi grade salmon and you roll them into a shape of a tube with heat-safe cling foil. It's then submerge in water that has been on keep warm mode. Leave it for around 20 minutes. The salmon will slowly cook and turn out like the above.

What you get is salmon that is cooked enough and don't have the whitish marks that appears and pale orange in colour when you cook it at home. This was so soft and delicious!

Yup, for those who cooks, this is like sous vide! Just approximate temperature that's good enough to try it at home without the expensive equipments!

Beef Tenderloin En Croute with Sauteed Wild Mushrooms

Beef tenderloin wrapped in pastry. Quite a big piece too!
For those who were hungry, this was a delicious filler to our tummy!

Every dish was paired with a different wine. We had 4 different wines that night and we had a Ms Pretty (yup, that's her family name) from Lindeman's explaining to us how to pair and explained how they paired that evening's dinner wines.

Marzipan

The dessert was Marzipan! Chef Emmanuel said they only had this during Christmas when he was growing up in Belgium. They are only allowed to have this during Christmas, where they can play with their food and then eat it!

Both Chef Emmanuel and assistant Tim was on stage showing how they craft mini figurines out. Impressive! It's like playing with edible Play-Doh! So fun!

The diners were to make their down dessert and the following are what people on the table I was on made. Yup, the more creative people!

Hubalicious: Naturally Viet with Chef Luke Nguyen

If you are a Starhub customer like me, you would have received emails from Starhub about their Hubalicious Food Festival 2010. I procrastinated and forgot to register. Procrastination was a good thing this time because a few days before the event, I got an invite by PR Company Word Of Mouth Comms asking if I am interested to attend the Hubalicious event.

If you are wondering what these Hubalicious Food Festival 2010 is about, visit http://hubalicious.starhub.com/ to read more about it. In short, you get to meet the chefs in person! Hear them speak, see them cook, taste their cooking, get them to sign autographs and take photographs with them! Who knows you might also win some prizes at the event!

For our TV at home, the channels that we watch are mostly the Food Channels or Lifestyle Channels. We were really happy when Starhub started offering a new food channel called the Food Network Asia. We were even happier when it was in HD! On High Definition, food looks even more delicious!

If you have been watching Food Network Asia, you would have caught the series "Luke Nguyen's Vietnam". I have been watching his show so I was really glad when I was invited to see him in person!

For Luke Nguyen's Hubalicious session, he cooked one dish from each of the courses we were going to have. The rest were all done with the help of the kitchen hand in the restaurant.

The menu of the night had 2 Entrees, 1 Middle Course, 2 Main Courses and a Dessert.

For the Entree:

Luke demonstrated how to make "Pan-fried turmeric and dill sole fillets, rolled in soft rice paper and mint leaves".

I tell you, everyone was salivating as the sole fillets were being pan fried in front of us. The smell of food with tumeric pan fried always smells very very good! How did he make it so easy peasy?

Well, making something looks good is easy, making something taste so wonderfully delicious is real skill!

The next entree was "Beef scented lemongrass rolled in wild betel leaves and char-grilled". We did not get to see him prepare this. But it sure look tempted us when it was served. There's a layer of rice paper below the vegetable. You wrapped it all up dip it in the dipping sauce and let the flavour blast in your mouth!

For the Middle Course:

Luke showed us how to prepare Banh Xeo. Banh Xeo is Rice flour crepe filled with Mung beans, prawns & Enoki mushrooms (wrapped with lettuce and fresh Vietnamese herbs).

He manage to make it look so simple! He chats with the audience, jokes a little, get someone to share the kitchen with him and before you know it, the food is ready and looks absolutely stunning! How do they do that? You know how some of us fumble in the kitchen?
 
For the middle course, the food was served with Beringer California Chenin Blanc.

Vietnamese food is always so healthy. They use lots of herbs and vegetables. As you can see in the photo above, a mountain of 'leaves' was served together with it.

The Banh Xeo was really crispy on the outside, and moist inside with all the seafood and mushroom. I guess sometimes you really got to have patience and let the outside brown and crisp without disturbing it. For most of us, we tend to always want to check and flip the things on the pan ya?

I was quite fascinated by one of the mint that was served. It was called Fish Mint! Why Fish Mint? Because it tasted a bit like fish! That's the big dark green leave show in the following photo.

For the main course:

Luke showed us how to prepare the "Salt and pepper soft shell crab, served with green mango salad". The Green Mango was all hand shaven! He proudly proclaimed, the mango salad that we all will be eating is ALL hand shaven by him! Don't waste it!

Who can resist crispy soft shell crab? The crowd absolutely loved it. Aha! He taught us how to make sure they were crispy inside not still moist (but not oily) inside. ;-)

The next main was the "Beef ribs, slow-braised in young coconut water." We did not get to see him prepare this in front of us. I guess it would take too long.

Just look at the beef ribs. Absolutely gorgeous don't you think?
It was well marinated and executed so nicely. ( I took thirds! Shh.....)

The mains were served with jasmine rice and Beringer Founder's Estate Merlot.

For Dessert:

We were served the Trio of Dessert: Caramelised grilled pineapple, Lemongrass gelato in shot glass and Baked Cassava Square.

Luke told us, desserts in Vietnam have always been loads of fresh local fruits. So this is not really the usual dessert. It's something special he prepared for us. These so called 'desserts' are Vietnamese snack all day long!

I particularly love the lemongrass gelato!

Dessert was served with Beringer California White Zin.
