Singapore National Culinary Team Hot Cooking Presentation

The FHA2010 Culinary Challenge will be held from 20 to 23 April 2010 at the Singapore Expo.

I got an email from the Chef Eric Low few weeks ago. I am in his mailing list because I attended his cooking class at the Community Centre before. He shared that the Singapore National Culinary Team will be showcasing their National Team Challenge - Hot Taste Menu on Sat 27th March 7.30pm at Chef’s Daniels kitchen in Iluma. It will cost $45++ per pax.

Chef Eric said he was part of the Singapore Team when he first started out as a chef. He also mentioned that he and Chefs Eric Teo and Louis Tay has been tasting and fine tuning the dishes that was to be served.

He added in his email:
"In this tasting menu, you will get to experience every cooking technique in classical and modern history of cooking. From slow braise to elements of molecular gastronomy, it is once in a life time experience to dine with some of the best chefs in Singapore and this menu will never be offered in any restaurant and will never be back again once over. Hence I urge all of u here to give it a shot of what that would cost at least double in most other fine dining restaurants in Singapore."

Did that tempt you? It sure tempted me! I booked 3 seats.  For Momo, Sis and myself ;-)

Here's what we had:

The appetizer:  "Lime Infused Confit of Norwegian Salmon, King Crab Terrine served with Watermelon Sorbet".

After tasting, we were asked to fill in our comments. I shall refrain from commenting how wonderful the food was. I shall not jeopardize their chances of winning by revealing too much.  ;-)

If the judges like this creation of the Singapore Team, they will get into the final 3. The final 3 teams will be given a basket of mystery ingredients. They will need to produce a 3 course meal for 50 diners. (Hmmm the mystery basket concept reminds me of the cooking show "Chopped" on AFC! )

You should take a look at this form. It has details of the menu and prices. I realize they have buffets too from various cooking teams from many countries.  But the website says the event is open only to trade visitors and people in the 'industry'. Does that means commoners like most of us don't qualify to get in?

I finally get to see the pics! The food looks exquisite lah. Must have overlooked the menu last time because I can now see that they really try to infuse as many local ingredients as possible. Maybe some belacan will add some excitement to the dishes hor? hehehe.

It's fresh local ingredients, with more 'foreign/gastronomical' terms used.
